Does anyone know where I can go so that I can find information on how to open a whiskey distillery?

Where do you want to do this? It would be useless to give you the laws and regulations for the UK if you are in Australia...and so on.

Try contacting lour local licensing agent 1st.
Better to get familiar with what will be required to have & do by law in your area.
