Also, I'd be open to any suggestions on making turkey stock.

The biggest advantage I see is that you get to control what goes in it (good for taste and health), but more importantly what does not go in it. I do use canned stock a lot, but I prefer to make my own, which I usually do on rainy days when I can't go fishing. My biggest gripe with store bought stock is the amount of salt. I am a big eater, but I would rather not get my entire RDA of salt in one bowl of stew (plus, the extra water I have to drink to counteract the cottonmouth). Home made stock is extremely easy, just extremely time consuming - unless you have a pressure cooker. To make turkey stock, throw all of the leftovers from you bird (if starting from scratch, buy raw turkey legs - they're cheap and have lots of goodies to make a thick rich stock), celery, onions, a couple of whole garlic cloves, what ever you want in terms of spice (fresh tyme, oregano, etc.), maybe a couple of carrots, some salt and pepper, cover with water and fire away. As it cooks, you will probably want to skim the protien foam off the top as it forms. On the stove top, this could take anywhere from 2 - 4 hours.

The main benefit (in my opinion) is that you can control the amount of salt in it. Most store bought boulions, bases, and stocks are very high in salt.

One of my favorite stocks to make is seafood. I save all my shrimp tails when I serve shrimp and then brown them with onions to start a seafood stock.

You can control the flavoring (salt, spices, stock vegetables) and you get a richer flavored stock when homemade. Though, homemae stock spoils easily if contaminated during and after cooking.

The biggest advantage is taste. I've never had canned stock that tasted as good as my homemade stock.

It really doesn't make any difference.....and it's UN reasonable to think we can keep all the ingredient to make our own stock all of the time.....being lazy has nothing to do with it.

Several brand names make both chicken and beef broth"Swanson" comes to mind....low sodium is also available.

They are easy,quick.....taste good!

And I make great soup all the time....would be happy to share...

Homemade is always best, on preservatives added, unless you add them. you know what's in there.
