This is what I do to my tilapia.
After cleaning it out and all,i rub it with a bit of sea salt. then I make the best marinade ever for it. I grind chillis, ginger, garlic and basil in a mortar till it's a smooth paste. Then i squeeze some lime juice into the mix and rub it on the fish. I drizzle a little bit of oil on it and wrap the fish in foil with a few fresh veggies(chopped carrots, peppers, leeks, you can add whatever you want) and bake in the oven till the fish is moist and tender. You can marinate the fish overnight if you want and add the veggies when you're ready to bake but I find that it works well when you bake right after covering it with the marinade. The steam from the fish will cook the veggies till their just right. Oh and depending on how hot you like your food, you can pile on the chillis.

oh yeah, sometimes I bake the fish in a banana leaf. It gives it a nice touch.

Change to: servings US Metric
1/4 cup butter
1 tablespoon lemon juice
1 garlic clove, minced
1 teaspoon instant chicken bouillon granules or beef bouillon granules
1 teaspoon parsley flakes
1/2 teaspoon knorr aromat seasoning, for meat (optional)
1/4 teaspoon basil
1/4 teaspoon paprika
1/4 cup dry white wine
2 tilapia fillets
Melt the butter and add remaining sauce ingredients.
Pour sauce over tilapia filets.
Bake at 350F for 20-30 minutes.
Serve with rice.

BAKED WRAPPED TILAPIA
Fish dish: Tori Amos's favorite recipe
Chef Duncan Pickford shares his recipe for his client's preferred healthy dinner.
Topping
1-inch cube fresh gingerroot, finely chopped or grated
2 cloves garlic, peeled and finely chopped or grated
2 green onions (green part only), finely chopped
Fresh chile to taste
1 cup finely chopped cilantro
2 tbsp grapeseed (or safflower) oil
Dash of toasted sesame oil
Dash of soy sauce
Dash of fish sauce
4 tsp dark maple syrup
Tilapia
4 fillets (4 oz each) fresh tilapia (or other firm-fleshed whitefish)
4 large banana leaves (or unbleached parchment paper)
Preheat oven to 400°F. Combine all topping ingredients in a bowl. Season with salt and pepper to taste. Place a fillet on each banana leaf and divide topping evenly among them, spreading it over the top. Fold each banana leaf over to form a packet around each fillet and seal the edge of each packet with a small piece of aluminum foil, crimping it tightly. Place on a baking sheet and bake 25 to 30 minutes.
Nutritional analysis per serving: 213 calories, 10 g fat (1.5 g saturated), 7 g carbohydrates, 22 g protein, trace fiber
Makes 4 servings.
