Traditional sausage casings are made from the membrane that encases the small intestine of pigs. Hot dog sized casings are made from sheep intestines.

However, many sausages and most hot dogs these days are made using artificial casings made from collagen.

The natural casings become a bit more crisp when cooked and are preferred by true sausage connoisseurs.

FSIS is requiring that the labels of sausage products encased in
regenerated collagen casings disclose the use of the regenerated
collagen casing.

Sausage skin is indeed made from the lining of animal intestine, usually that of hogs. Sausage is a mix of ground meat and spices stuffed inside those skins. There is also skinless sausage. It's all good and good for you - in moderation.

Edible casings are going to be from intestines, collagen or cellulose. Some skinless sausages are made with plastic casing that are removed before they are sold.
