Immortality is having a perfect body of flesh and bone that never dies, never experiences physical pain, never decays.
The following scriptures expound on this a whole lot better than I ever could:

53 For this corruptible must put on incorruption, and this mortal must put on immortality.
54 So when this corruptible shall have put on incorruption, and this mortal shall have put on immortality, then shall be brought to pass the saying that is written, Death is swallowed up in victory.
55 O death, where is thy sting? O grave, where is thy victory?
56 The sting of death is sin; and the strength of sin is the law.
57 But thanks be to God, which giveth us the victory through our Lord Jesus Christ.

(New Testament | 1 Corinthians 15:53 - 57)

40 And he shall come into the world to redeem his people; and he shall take upon him the transgressions of those who believe on his name; and these are they that shall have eternal life, and salvation cometh to none else.
41 Therefore the wicked remain as though there had been no redemption made, except it be the loosing of the bands of death; for behold, the day cometh that all shall rise from the dead and stand before God, and be judged according to their works.
42 Now, there is a death which is called a temporal death; and the death of Christ shall loose the bands of this temporal death, that all shall be raised from this temporal death.
43 The spirit and the body shall be reunited again in its perfect form; both limb and joint shall be restored to its proper frame, even as we now are at this time; and we shall be brought to stand before God, knowing even as we know now, and have a bright recollection of all our guilt.
44 Now, this restoration shall come to all, both old and young, both bond and free, both male and female, both the wicked and the righteous; and even there shall not so much as a hair of their heads be lost; but every thing shall be restored to its perfect frame, as it is now, or in the body, and shall be brought and be arraigned before the bar of Christ the Son, and God the bFather, and the Holy Spirit, which is one Eternal God, to be judged according to their works, whether they be good or whether they be evil.
45 Now, behold, I have spoken unto you concerning the death of the mortal body, and also concerning the resurrection of the mortal body. I say unto you that this mortal body is raised to an immortal body, that is from death, even from the first death unto life, that they can die no more; their spirits uniting with their bodies, never to be divided; thus the whole becoming spiritual and immortal, that they can no more see corruption.

Eternal life is life with and as God lives.
The following might help clarify:

1 THESE words spake Jesus, and lifted up his eyes to heaven, and said, Father, the hour is come; glorify thy Son, that thy Son also may glorify thee:
2 As thou hast given him power over all flesh, that he should give eternal life to as many as thou hast given him.
3 And this is life eternal, that they might know thee the only true God, and Jesus Christ, whom thou hast sent.
(New Testament | John 17:1 - 3)

59 That by reason of transgression cometh the fall, which fall bringeth death, and inasmuch as ye were born into the world by water, and blood, and the spirit, which I have made, and so became of dust a living soul, even so ye must be born again into the kingdom of heaven, of water, and of the Spirit, and be cleansed by blood, even the blood of mine Only Begotten; that ye might be sanctified from all sin, and eenjoy the words of eternal life in this world, and eternal life in the world to come, even immortal hglory;

It's almost noon, approximately one hour has gone by since you've asked this question, and not one mormon has answered?? Have the bedroom shades gone up in Utah yet? That's a first! Eternal life is something Christians have more knowledge of than mormonism ever will. Everlasting Life is the same thing, just said a different way. Maybe mormons are not responding because they are stumped? Check out FAIR or FARMS for the answer. They will clue you in on the latest LDS apologetic multiple answers. You'll get loads of varying answers on here from mormons who know little to nothing about the realities of their own religion, despite studying the same lesson each Sunday the world over. I wonder how they do that? Study the same thing yet come up with so many wildly differing answers? I could see if it was a conglomeration of various denominations, but they claim to be so "perfectly unified"..... So why isn't it showing?

Immortality is "deathlessness". Eternal life means to live eternally. Different ways of saying the same thing.

Both are only available through Jesus Christ.

Immortality is life forever as a human on this planet while eternal life seems to suggest a life post existence on a metaphysical plane.....I guess?

Immortality is where someone will live forever.

Eternal Life is where someone lives forever and is able to continue having Children
