The water would diffuse into the cells of the plant by osmosis because the concentration inside the cell is less than that of outside the cells. This creates turger pressure which makes the plant "stand tall" so that the leaves can get sun.

I dont get the question. Did it wilt after you watered it? Jade plants do that because it is a cactus.
There are plants , in fact many house plants that are chosen because they thrive with little water. So if you were too kind, they drown with too much watering.
Or was the question about the way a wilted plant looks after you watered it. It looks revived ! alive ! YAY, it is doing a little happy dance? In that case, it is saying thank you.

I assume you mean how one explains how the plant suddenly perks up after watering it? Even though plants look like not much is going on with them, there is a bunch of stuff going on inside them all the time. The water is absorbed through the roots and then to all of the stems and leaves, increasing their hydrostatic pressure and causing them to stand taller again.
