Spiced Pumpkin Custard

INGREDIENTS:
3 cups half-and-half
6 large eggs
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/3 cup molasses
1 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/4 teaspoon salt
3 cups puréed pumpkin, or about 1 1/2 cans
Whipped topping or sweetened whipped cream
PREPARATION:
Butter a shallow 2-quart baking dish. In a small saucepan, bring half-and-half to a simmer; set aside. In a medium mixing bowl, beat eggs, sugar, molasses, cinnamon, ginger, nutmeg, and salt. Mix in pumpkin and warm half-and-half.
Pour mixture into prepared baking dish. Set dish in a large baking pan. Add hot water to the large pan to a depth of about 1 inch. It should come about halfway up the side of the inner baking dish. bake for about 50 minutes at 325° or until custard is set and a knife inserted near the center comes out clean. Cool completely before serving; can be covered and refrigerated overnight. Serve with a dollop of whipped cream or whipped topping.

1 medium onion, minced
1 clove garlic, minced
1 teaspoon margarine or olive oil
3 cups reduced sodium chicken broth
3 cups pureed cooked pumpkin
1 teaspoon dried oregano
1/2 cup toasted pumpkin seeds
Heat margarine or olive oil in a medium saucepan over medium heat. Add the onion and garlic and cook until softened. Add the broth, pureed pumpkin and oregano and simmer for 30 minutes. Sprinkle with pumpkin seeds and serve.
Makes 4 Servings
Serving Size: 12 ounces

I do not like the taste of pumkin at all, it's too stringy but my advice is to make a soup with it, simple!

pumpkin soup is good.
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
6 cups chicken broth
1 can (16 oz.) solid-pack pumpkin -- up to 2
1 cup onion -- thinly sliced
1 clove garlic -- minced
1 1/2 teaspoons salt
1/2 teaspoon thyme
1/2 teaspoon pepper
1/2 cup whipping cream -- warmed
1 large fresh pumpkin -- hollowed out-

Fresh parsley -- optional
In a covered saucepan, heat all ingredients except cream to boiling. Reduce he

sley and serve from a hollowed-out pumpkin which as been warmed for 20 minutes
in 350 degree oven.

Peel it cut it in to pieces boil it with a stock cube until soft and puree ! Delicious pumpkin soup !

Carve it, its soo much fun!!
My boyfreind had never carved a pumpkin before until Tuesday and thought i was nuts for suggesting it but it was really fun. We made faces and then put stars all around

cut into cubes and boil until soft, drain and sprinkle with brown sugar. really tasty and goes well with roasts and other veg.
also, good as a roast veg
far better than as a pie

pumpkin pie is lush - its like an egg custard tart
just do a search on here for pumpkin pie recipes - i asked for some a week or so ago and got loads
its really tasty best served bearly warm with a dollop of cream

make soup? pie? loads of stuff but you could slice it put it in the oven with a sprinkle of sugar and wait till it is golden brown and then eat it
