PEANUT BUTTER COOKIES
Active time: 45 min Start to finish: 1 1/4 hr
1 stick (1/2 cup) unsalted butter, softened
1 1/2 cups chunky peanut butter (not "all-natural")
1 cup packed light brown sugar
1 large egg
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Preheat oven to 350°F.
Beat together butter, peanut butter, and sugar with an electric mixer until pale and fluffy, 2 to 3 minutes. Beat in egg, then remaining ingredients until a dough forms.
Arrange level tablespoons of dough 1 1/2 inches apart on 2 buttered baking sheets, then flatten in a crosshatch pattern to a 2 1/2-inch round with fork tines.
Bake in middle of oven until slightly puffed, 12 to 15 minutes. Cool on sheets 1 minute, then transfer cookies to a rack.
Makes about 50 cookies.

These super simple cookies start with a cake mix. Use candy coat4ed peanut butter pieces instead of chocolate if you'd like.
INGREDIENTS:
1 pkg. two layer yellow cake mix
1/2 cup peanut butter
1/4 cup butter, softened
1/4 cup milk
2 eggs
1 cup candy coated chocolate pieces
PREPARATION:
Preheat oven to 350 degrees F. Combine all ingredients except candy in large bowl and mix until blended. Add candy, then drop by rounded teaspoons 2" apart onto ungreased cookie sheet. Bake at 350 degrees F.
for 8-11 minutes until cookies are light golden brown. Remove
from cookie sheets to wire racks immediately. 42 cookies

1 tablespoon water
3 tablespoons vegetable oil
1 egg
2 teaspoons Sugar
36 Kisses® milk chocolates, unwrapped
3 tablespoons Betty Crocker® white decorating gel
3 tablespoons Assorted holiday candy sprinkles
3 tablespoons Betty Crocker® red decorating icing
DIRECTIONS
Heat oven to 375 degrees F. In medium bowl, stir cookie mix, water, oil and egg until dough forms.
Shape dough into thirty-six 1-inch balls; roll in sugar. Place 2 inches apart on ungreased cookie sheets.
Bake 10 to 12 minutes or until light golden brown. Immediately press 1 chocolate in center of each cookie. Remove from cookie sheets. Cool completely, about 20 minutes. Decorate as desired using remaining ingredients.

It doesn't have yellow cake mix but is too easy and so good:
1 egg
1 cup sugar
1 cup peanut butter
1 tsp vanilla
Beat all ingredients together, form into balls on sprayed cookie sheet, flatten with fork.
Bake at 350 for 10 minutes.

1/8 teaspoon ground nutmeg
1 cup peanut crunchy butter, softened
1-1/2 cups granulated sugar
2 large eggs
1 tablespoon vanilla extract
Directions
1. Combine flour, baking powder, mace, nutmeg in bowl.
2. Beat butter and granulated sugar in large bowl with electric mixer until light and fluffy. Beat in vanilla, then eggs. Gradually beat in dry ingredients. Divide dough in half; flatten into disks. Wrap and refrigerate at least 4 hours or up to 3 days.
3. Heat oven to 375 degrees F. Grease 2 cookie sheets. On a lightly floured surface with floured rolling pin, roll dough 1/4 inch thick. Cut out shapes with 1-1/2-inch cookie cutters and transfer to prepared cookie sheets. Bake 8 to 10 minutes or until golden. Cool on wire racks.
4. Makes 6 dozen.Freeze in airtight containers up to 1 month.
