Use proper Bread making flour. Don't just go for normal or self raising make sure you use yeast too.

Try adding more yeast, and leaving it longer before you cook it. 3-4 hours even if you use fast action yeast. Also keep the temperature around the dough warm while it is taking effect.
I think that is what a bread maker does, but I don't know as I have never used one.

Try my recipe. It comes out perfect every time. We love it.
1 + 1/3 c warm water
2 Tbl olive oil
1 + 1/2 tsp salt
2 Tbl sugar
4 c white all purpose flour, not bread flour
1 + 1/2 tsp yeast
Put them in the machine in that order and set for french bread (not rapid rise) Enjoy.

Buy specialist bread flour from good shops. The best is French and sold by Waitrose.
But keep trying as all types of new cooking require persistance.

home made bread is always heavier because it hasn't got all the additives in that shop bread has. You will get used to it and certainly find it is more filling. Experiment with seeds like sunflower, sesame, poppy, pumpkin etc. I bake my own bread too and love to put all sorts of different seeds in the mix.

i bought a bread maker,, used it twice then gave it to my daughter,, the bread was heavy and had a hole in the bottom from the paddle.. i make bread by hand now and its much lighter and tastes so much better.

Check to make sure you're using the correct setting.
Make sure you are measuring the ingredients exactly as stated in the recipe book.It is trial and error until you get used to it.

experiment with different types of flour or try butter instead of oil or vice versa....no easy help here, u just ahve to see what works best with ur machine!

practice makes perfect! make sure you use tepid water - too hot and it kills the yeast and too cold and it doesn't activate the yeast. see you later - just off to make another loaf xx
