I'm making dinner for my bf and me, and I couldn't think of a good side dish to serve along with salad. He and I are both trying watch what we eat so I'm using low fat cheese and ground turkey for the lasagna, but I dont want to go overboard with the carbs by including bread with the pasta. I'm looking for a good vegetable side that compliments the pasta. Any suggestions?

Here's veggies we don't like:

Squash
Peas
Asparagus
Corn (off the cob)
Zucchini

Personally I think the Lasagne stands very well on its own for that particular course, although I have served some slices of breaded eggplant that I have browned on my stovetop griddle and sprinkled a little fresh grated Parmesan on top. But I never serve it without the "balance" of some mixed salad.

how about baked potato wedges or baked chips? Or even filled baked potato skins. How about grilled or baked vegetables? Bare in mind that lasagna is a heavy meal because its meat AND pasta so your guests may not need anything more than your delicious sounding garlic bread. If your looking for something more why not a light dessert instead? Such as an ice cream sorbet or mousse.

Lasagna is a heavy meal alone so something light.
How 'bout just some sliced tomatoes, sliced onion (maybe red onion) drizzle some Italian dressing or balsamic vinegar, or red wine vinegar over the top or add some sliced cukes.

Sliced cucumbers and low fat sourcream add a onion

Steamed Broccoli

Asparagus steamed or drizzled with some olive oil and roasted in the oven

Green beans with some slivered almonds

A great side for lasagne is green beans or spinach sauteed in a little olive oil, chicken or vegetable stock, garlic and finely chopped onions. Another great option is a steamed artichoke as an appetizer. Lasagne generally stands alone and to prevent your diners from getting overly full, it is nice to have a veg starter instead.

Tomatoes with cottage cheese(lowfat cottage cheese is actually very good for you). Sweet corn(on the cob), what about broccalli and/or cauliflower and cheese, stuffed mushrooms, stuffed bell peppers. Another interesting to do is fry some turkey or pork bacon. Dry it out, crumble it up and add it to you Lasagna or to your Spagetti sauce. It is trial and error. But trust me it adds a very good taste. Too much will over power your original meal so start out light the first time like 2 or 3 strips.

Fresh tomato slices drizzled with olive oil with a pinch of basil, salt and pepper. Cucumber rings with balsamic vinegar and cracked black pepper. Mushroom caps broiled with Parmesan cheese, basil, salt and pepper or top with garlic spread and recipe crumbs broil and serve (toaster ovens are great for small servings) Hope this helps!
