Obviously they would be thawed out but since they are no longer in season would frozen strawberries work just as well?

Frozen berries work fine for jam and work even better for syrups and jelly because the juice is much easier to extract.
Don't drain the fruit. Measure it frozen. I actually freeze according to the size of the batch and label the bag with weight or measure and recipe source. Then there's no agonizing or trying to remember 6 months down the road
