I'm waiting for my husband to get home from work. He'll be home between 5 & 7 tonight. I want to cook something good for him, but I don't want to do a stew or soup. He LOVES chicken...any ideas that are pretty simple?

ANYTHING can go into a crock pot or a big pot ontop of the stove or in the oven. If you have an electric fry pan those are great.
If you want to use chicken put chicken in a crockpot with a bunch of veggies---carrots, celery, onion, potatoes, whatever you have, throw a little water and some chicken boullion or a can of chicken broth in with it, maybe some seasonings of yor choice. The longer it cooks the more tender it will be. Chicken on the bone will just melt off or use chicken breasts. You can do the same in the oven or on the stove top. You can use some other type of meat also. The best part about a crockpot is you can't mess it up. You can do whatever you like with it. If you don't have one they are inexpensive go out and get yourself one right quick. I LOVE one-pot meals.
Another way take pieces of chicken with some veggies/potatoes, salt and pepper or other seasonings wrap it all up in foil. Fold the foil like a pocket--in half over the chicken then roll the sides to seal tight---be sure to seal tightly this holds the moisture in. Bake in the oven at 450 for about 25 minutes to 1/2 hour or until chicken is no longer pink. Chicken doesn't take that long in the oven.
You can also do this with pork chops.
Suggestions
BBQ sauce and onion
Honey mustard
For my chicken I like to use Italian dressing ( you can drizzle the liquid over the chicken or you can sprinkle dry ranch or italian dressing over the top)
You can marinate your chicken or meat for a couple hours if you've got time to kill.

Some sausage, onions, peppers in your electric fryer or skillet on the stoveor your crock; porkchops and sauerkraut with some potatoes, or Polish sausage, onions, potatoes, kraut ---we like to add frozen pierogis

You name it can be cooked in crock or big fry pan. I've got all kinds of them.
A roast (beef or pork) in the crock or oven. Season your meat, add veggies, cook it all day until your man gets home. Add a little flour or Wondra to make a little gravy. The longer the more tender.
Just cook everything on a very low setting 250-350 if you use the oven or electric fryer.

pork roast with potatoes, onions and carrots is so easy in the crock pot. Season the meat and let it cook half the time by itself. Then add the vegetables to the meat and by the time he comes home it will be done. The best part is that you can leave. You don't have to babysit it. Make sure it is on high or it won't be done. Also make sure the meat is thawed first. Frozen meat takes a bit longer. YUMMY!!! Make some garlic bread to go with it. You can buy it premade now and just run it under the broiler for 5 minutes and whammo!!! dinner. GL

Well chicken does not take 6 -7 hours. If you want to cook something for that long try a pot roast. Add carrots & potatoes when the meat is done.
Just brown it first, put it in a dutch oven add onions, celery and seasoning and slow roast it @ 225.

Or better yet, put it in the crockpot on low.

Six - Seven hours for a dish in the oven is a long time. Even a 12 lb turkey doesn't take that long. I have seen recipes for i.e. roasts where you cook at 250, but I've never tried it. A slow cooker is inexpensive, and you can prepare an entire meal, i.e. roast, potatoes, carrots, onions. Ribs turn out very well - fall off-the-bone good.
