Because "American Pit Bull Terrier" has never been recognzied as a breed. It is a name people who raise staffies, bullterriers, mixes of the two in their backyard call them.
For something to be a breed, there must be a
(1) Breed standard about the dog's build, size, conformation, way of moving- read the ones on the websites below to see what they look like
(2) Carefully kept records of pedigrees and registrations (done by the breed club here andthe place they came from)
(3) An area of origin - say, a place in /BelgiumFrance where the dogs exist and have existed for a long time (Leonbergers now listed as a Foundation Stock Breed with the AKC) or an area in Northern Italy.
Someone's backyard where they were bred from whatever people can get their hands on is not it.

AKC recognizes breeds only after a National Breed Club sets standards and maintains them for several years. The 'new' breed then can be shown in Misc. at shows for a period. (Some 'new' breeds to AKC include the oldest in the world, like Pharoah Hounds, Shiba Inus, etc.) A set amount of dogs conforming to the standards the Breed Club presented to AKC have to be presented. There are some more processes needed, and you can find these out at AKC.com.
I don't personally know a whole lot about the American Pit Bull Terrier as a breed, but I would guess the reason AKC doesn't recognize them is because the American Pit Bull Terrier Club of America (if such an organization exists!) hasn't followed through with the processes needed to gain these dogs this status.

It is a bit confusing. American Staffordshire terriers and American Pit Bull terriers are essentially the same (the Pit Bull is larger, though), they just have different names according to the registering body. The same is now true for Jack Russell terriers. The UKC uses this name still, but the AKC has renamed the breed Parson Russell terrier.
To further muddy the issue, there is a Staffordshire Bull terrier, which looks very similar but is more squat.

Believe it or not at one time they where actually one breed. What happened was the AKC did not want to be associated with dog fighting This is when the breed started to become cousins so to speak .Here's a little history of registeries for bull dogs. 1898 was the first registry for the APBT called the UKC.38 years after the UKC registered the APBT ,the AKC started to , but only to get away from the stigma of dog fighting.They changed the name of the APBT to the name of the American Stafforshire Terrier.This happened in 1936.So in retrospect ,now UKC dogs can not be registered with AKC as Pits ,but AKC can be registered with the UKC as Pits.
Some say they are not different breeds ,then some will say they have become 2 different breeds over the years. By looking at them ,if you look hard enough you can see the difference in the dogs. I feel they are cousins so to speak. I hope I helped.

I owned an American Pit Bull for 11 years until he handed and that i at the instant very own 2 Staffordshire Bull Terriers. We have a Stafford shire and a very loving dog.The staff. is a old breed and the pits is a kind of a new breed. And I think until people see just how loving the Pitt, is it wont be a akc dog.Oh and areStaff. has only 3 legs.And she is hell on 3 .LOL
