The "Walk to Emmaus" is similar to the Catholic version called Cursillo. Cursillo de Christidad (short course in Christianity)
Technically, you're spoiling the secret for those who haven't experienced it. It's usually a three day intensive on Christianity. Talks, meditations, singing, food.
Oh how FUN!! You're only sending one letter? I load up.
Visit your local Christian store and buy some cards or something.
Pray about it. Turn to the psalms. God will help you pick the right one.

I'm a Cursillista (the Catholic version of the Emmaus) so I've been down this road.
The weekend is a 'short course in Christianity' that consists of a series of talks given by ordinary people. During the course of the weekend, other people pray for them and for the success of their journey during the weekend.
That's what your 'letter of encouragement' should be. Tell your friend that they are special to you (elaborate if you can on what makes them special), and that you are praying for them this weekend.
That's about it. Just a nice note saying something nice, and telling them you are praying for them.

Hmmm. The point of the story is that Jesus resurrected and walked along side of Cleopas and his nameless friend for quite a while, and they didn't recognize Him the entire 7 miles of the journey. That makes me think about all the times I don't recognize God in the world or in other people because of my off-the-point expectations, or because I'm not looking for the right thing. That seems like it would lend itself to making an inspirational letter.

as a friend you should encourage him in whatever he's doing. Tell him that in a clear way. Not knowing exactly what he's doing makes things harder, but support him in what he's chosen to be a part of.
