Something original that doesn't cause a lot of monetary damage so that you don't get into too much trouble. Mess around with the PA system especially if you can splice together your principal's voice cancelling school.
I've heard tons of past stories concerning senior pranks involving wildlife. Crickets in the ceiling, 3 pigs painted 1, 2 and 4 so people were looking for that elusive number 3, cars on the rooftop, and dead fish in the venitlation system.
