Applesauce would be better and better for you! Also if it asks for water replace it with milk. This will make your cake moist. However if you are cooking red velvet then stick to the ingredients. Milk doesnt work for that kind of cake for some reason!

Melted butter does not have the same properties as oil, so your cake will not turn out as good. If you're wanting the flavor of butter, you can always add a splash of butter extract and use the oil as directed. If you're out of oil and wanting a good substitute, you can try melting solid shortening, and use it in a 1:1 ratio.
If you choose to use applesauce as the other answerers suggest, applesauce can replace up to ¾ of the shortening (oil) in many recipes. Add the applesauce with the liquid ingredients and reduce sugar in recipe if the applesauce is sweetened.

If you want to substitute butter for oil, melt it gently first, let it cool, and use exactly the same volume of melted, cooled butter as you would have used oil. The cake may turn out slightly richer, and possibly different texture-wise, but it certainly won't do it any harm, and may in fact improve the recipe!

Yes you can use butter as long as you soften first. You'll need 2 sticks of butter to equal 1 cup oil. Yes, it may change the texture somewhat but not enough to hugh difference. The taste will definitely be richer. Good Luck!

You can use butter but you have to use a little less than a cup . i would use 3/4 of a cup. And make sure it is room temp. and the eggs as well. This will make the cake a little more fluffier if you mix a few minutes more.

In the superstore, fruits are usually picked out far too soon. Some are rocks, many are bad. Some of the fresh vegetables are typical right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
