1 small equals 1/4 cup chopped
1 medium equals 1/2 cup chopped
1 large equals 1 cup chopped

Well, that would depend on how small, medium, or large. Chop it up and put it in a measuring cup if you need a specific amount. I never measure anything, so you just have to try a few times to get the flavor you're looking for.

I never measure mine. It's just to taste, the recipe, whatever looks right. Eyeballing it is the easiest way.
