I want to make some lemon cranberry quickbread and the recipe calls for 2 tablespoons lemon zest as well as the lemon juice. Do you think it will turn out ok if I leave out the zest?

lemon zest has more flavour than the actual juice
the juice only has a tangy, sour-ish taste
and also i like seeing the lemon zesty bits in my breads..

Yes it will be fine. Lemon zest is always optional, unless you're making lemon marmalade. As long as you're using real lemons for the juice, you'll get that fresh lemon taste, so don't increase the amount of lemon juice, as that will change the consistency of the batter, and increase the acidity too, which could ruin your recipe. Lemon zest has no acidity, just adds the natural oils which are found in the skin of the fruit. But it'll still be good without.

Yes lemon zest is just the peel of the lemon I would make the quickbread without it. It just will not have the fiber and the extra taste of the lemon. But why do you want to leave it out? It is easy to do you just use a fine grater on the peel of the lemon, and grate until the yellow peel goes down to the white.

You can leave out the lemon zest if you like....the only thing I would suggest is.....double up on your lemon juice to keep that fresh lemon flavor.

The truth is you can replace it with zest of orange as a substitute. It will be sweeter but still good or you can go without any zest. But what is life without a little zing?

If you leave the zest out it will just be cranberry quickbread.

I never put lemon zest in when called for - it will be fine.

Yeah. The zest adds abit more zing but you'll get satisfactory results without it

You can leave it out, but believe me the taste will be even more incredible with it!
