Use cottage cheese it is much better in lasagna

I use cottage cheese. I mix it with an egg and about a half cup of grated parmesan. Thats the way my husband likes it. My family has always made it using cream cheese instead of ricotta cheese. You just put teaspoon size dollops over the layers, everyone I have ever made it for just loves it. It makes the lasagna very creamy.

When you make the lasagna you need the three cheeses, the lasagna noodles and the tomato sauce and ground beef or meat, unless its vegetarian lasagna. Make the tomato sauce according to the recipe and spoon the ricotta cheese gently into the sauce without stirring it.(a suggestion) or use grated Cheddar or Feta or any cheese that your mother might like. If you use about 1 1/2 lb ground cooked meat in your recipe add one egg to it. It helps to firm up the lasagna. If you just make it a vegetarian lasagna, use the egg and add it to the tomato sauce with the cooked vegetables mixed into it. Lastly layer all the ingredients according to the recipe alternately as directed. I like to use Oven Ready Lasagna noodles, which saves the step of boiling the noodles. Then I add one 8 oz. glass of water poured around the top edge of the whole lasagna , before baking it in the pre heated oven. After the cooking time, everything is absorbed and tastes wonderful.

As far as I know, the usual substitute is cottage cheese. I've seen that in a ton of recipes.

I use mozzerella and parmesan. Some people use cottage cheese instead of ricotta

Very, very dry cottage cheese. It works. Put the cottage cheese in a strainer & get as much liquid as you can out of it, then follow your recipe.
