Your eyes have things called rods and cones in the back of the eye ( retina). The cones are what shows the colors of objects. We have fewer rods than cones. Rods are not sensitive to color but are really good as motion sensors.
I would say it would be more important for survival to be able to detect motion (of potential danger) than it is to see the color of things. So that is why we have so many more rods than cones.

Because the Moon Light Has a blue color when it hits the earth, so there isn't enough light to really give us a colorful thingy so yea
