I was wondering does it has something to do with the fact that the apples are cold. And what is the best apples to use.

Yes, cold apples make sweat from the air condensing to water when hot candy meets the skin of the apple. You need to use room temperature, dry apples. Even so, in a day or so the candy coat will tend to slide downwards and pool on the bottom, and also get sticky as the sugar absorbs humidity. If it's rainy outside, don't make them. Rainy days are not good candy making days because of the extra humidity.

Any apples will work. The apples should be dry. I usually use room temperature, but I can't imagine that would matter. Doesn't sound like your candy is at a good temperature.

when making Candy apples you need an apple that is crisp like granny smith red Delicious apple is the one every one uses...Make sure you wash your apples because some are coated with wax....But I use 3 cups of sugar 3 cups of Karo clear syrup add together cook till it comes to a crack stage ....Test it bye drooping some into cold water it it will crack real easy when it is done...of course you add red food coloring or you can make them any color you want.....good luck sweetie and God bless you and all.....

wash the apples very well to make sure all wax is removed and then make sure apples are completely dried
