Not only do you need to know which dialect of Chinese to speak but also which transliteration system you use.
Putonghua (Mandarin) is the official language of China and the official transliteration system used in China is Pinyin.

So using Pinyin to transliterate Putonghua :

Hello is " Ni Hao" . There is no need for the "ma" at the end .

Thank you is "Xie Xie"

Goodbye is "Zai Jian"
