Bananas, mangos, you know, fruit. Some of them taste bitter and things, but when you leave them for a few days, they suddenly taste sweet. Why is that?

It takes a little heat and air for fruits to ripen. If you decrease the air that surrounds the fruit it will ripen faster. This is just a guess though, because it happens to my banana

I think the chemical process is called erosion, but i'm not sure. Everything in the known universe is a slave to it.
