Over druged I like the sound of roasted garlic!! Have to say potatoes although parsnips are good too!!

Sweet potatoes. Just roast, peel and enjoy.

A little less common is sweet squash. Just empty the seeds and guts, scoop in a little butter. Roast and voila!

Also, plantains are great roasted.

Red onions, potatoes, sweet potatoes, parsnips, carrots, butter nut squash, pumpkin, courgettes, marrow, tomatoes roasted with olive oil and a sprig of rosemary and a clove of garlic, yummy.

Roast potatoes are definitely top, followed closely by roast parsnips, mmmm, I am getting hungry now.

Parsnip roasted in a few spoons of runny Honey, but boiled in water for ten or fifteen minutes, before roasting.

parsnip, carrots, turnip and onions chpped roughly and put in a tray with oil in the oven for 30 mins is yummy

A baking tray full of peppers, courgettes, red onion and cherry tomatoes sprinkled with crushed garlic and olive oil. Makes a great side dish.

I roast a lot of veggies...I love it. My favorites are broccoli, zucchini, asparagus, and butternut squash. Oh and potatoes...can't forget about potatoes!!
