Salmon isn't necessarily the healthiest fish around. It's considered a fatty fish. There are some other white fishes that are actually better for you and have less fat.
My favorite is haddock. It's a fish that's easy to cook and even if under cooked is VERY good. Be careful not to overcook it though or it will dry out. That's why oily fish is more common restaurants west of the east coast. People just don't know how to cook it.

Where do you live?
If you're in the South Pacific, specifically New Zealand, I can suggest some fantastic fish!
Schnapper, terakihi, flounder, sole.
If you're in FNQ Australia, Ocean Trout..but if I was there I'd be making a pig of myself on the prawns instead.
I have 2 favourite ways of cooking salmon.
* Bring water to the boil; add 1 cup of white wine & freshly ground pepper to taste. Bring to the boil again, boil for 5 minutes. Gently place an entire fillet of salmon into the pan & simmer for 10 minutes.
The skin peels off easily and you have delicious fish!
* Coat an entire fillet of salmon with oyster sauce, sprinkle soy sauce on top, & bake in a moderate oven (350C) for 20 minutes.
Schnapper & Terakihi work nicely in the wine & water too.
Alternatively, place them on greased foil, top them with tomato & lemon slices, fresh herbs like cilantro (coriander) & basil, close up the foil & either grill, bake or barbeque.
Terakihi is fantastic in a Thai Green Curry sauce. You can buy 'ready to go' sauce at the supermarket, or you can go all out and make your own from fresh herbs and spices (well worth the effort).
Flounder or sole:-
Simply coat them in flour & fry. The volume of fish far outweighs the oil you'll use. Delicious!
My tastebuds are doing flips right now, and I'm drooling!

Whew, I was born and raised in British Columbia and I can assure you that salmon is a LONG way from the "best tasting fish!"
I now live in Mexico and the absolute favorite down here is "Huachinango" which simply means Red Snapper! The favorite way to prepare it is cooked in butter and LOTS of garlic with lemon/lime added at the end.
I must also say that FRESH swordfish cooked in a little butter with lemon and dill is simply excellent as well!

Salmon can be a fatty fish at times. Personally i like barramundi or sea bass depends on where you are from.The flesh is moist and tender often melts in your mouth when it's done correctly. Fat content almost zero. Best way to eat is simply grill it.Seasoned with salt and pepper, butter, lemon juice. Do not overcook. Meat will be tough.Enjoy with a glass of NZ Oyster Bay Sauvignon Blanc.

Orange Roughy is also very healthy. Don't listen to those who said salmon is not the healthiest. Fatty fish are good for your heart and brain. Trans fats are the ones you want to avoid.

I was gonna say salmon cos I love salmon, but since you don't like it... grilled Dory ? It tastes pretty good. Just don't think of Finding Nemo when you eat it.

Pacific Rock Cod are the most delicious fish I have ever tasted, but the Japanese have scoured the bottom so badly off the U.S. and Canadian coast, there are hardly any left.

Halibut is so much better for you than Salmon. It can be cooked several ways but, I prefer it ''blackened''.
Serve it up with your favorite fresh veggie and some quality bread....and do not forget a couple lime wedges! Folks who use lemon wedges are missing the world of flavors that LIME brings out in any fish or sea food!

Sword Fish is good, costly though.
Perch and trout are good too.
I think Cod Fish is out right discusting, it has a fuzzy texture to it and no taste either.
