The best meals are made from leftovers..... leave it to a chef to figure that out.
Here's an easy recipe that will take minutes.
1. Dice the chicken
2. In a heated pan (medium high) brown the chicken in butter
3. Throw in some diced onions, garlic powder and celery salt and then quickly toss that mixture around.
4. Add the potatoes and mix it all up.
Sounds really gross but try it. It's actually pretty good and will make your company come back for more. If you really want to spice it up throw in some shredded cheese and voila.

I would do something like shepards pie which is hamburger and mashed potatoes. Put the potatoes in the bottom of a caaserole dish, then your chicken(chopped into pieces), Pour a can of cream of chicken or mushroom then put crushed saltine crackers on top and cook for 20 minutes on 375 then top with shredded cheese for 5 more minutes (until cheese is melted)

I love to make chicken salad with left over chicken. The potatoes can be reheated but that is dull. Fry the potatoes, mix corn and potatoes together, or make creamed chicken and put it over the chicken is easy,
Chicken salad is so easy, just ad mayonnaise and whatever else you like in it. You can add diced pickles, onions, relish, or whatever would suit your taste. Put it on bread or use it on a salad. Yum.
Creamed chicken is also easy. Put three cups of water in a cooking pan and add chicken, 2 bullion cubs, salt and pepper to taste.Cook on high to boil, turn down and simmer.
In a separate cup add 1cup water and 3tbs of flour
use fork to mix the two together, slowly add flour mixture to simmering chicken and stir until thick. Make sure the creamed chicken is seasoned to taste. Pour over mashed potatoes. Yum.

Add a can of chicken broth,stir everything well to get rid of the lumps in the potatoes, add chopped onion and garlic and you'll have a great soup!

Mix the chicken in with a few veg and some cheese sauce and put it in a casserole dish. put the spare mash on the top (mix a small bit of cheese sauce with it) and sprinkle with cheese and broken up cheese and onion pringles....cheesetastic

here is a nice tangy starter. take the chicken piecesand cut them into tiny crumbly shreds ,keep aside in a pan fry some mince onions add ginger and garlic chopped and then add a lilttle of re d chilli powder. fry well and cumin powder blackpepper powder and fry well add small cubed tomatoes add spice masala powder and fry well. add salt acc to taste.add one tsp of tandoor paste and curds. fry till oil leaves and keep aside. now take the potatoes and mash it well make a small ball put the chichen filling in it and lightly dip in a batter of egg and then bread crumbs. and shallow fry.
serve hot with tomato sauce .its yummy.

Yeah. Put them in a cassorol dish and pour teryaki sauce on it. 350 for about 20 minutes.
Teryaki makes everything better.

chicken can be "re-use" by making chicken sandwich spread!!!! its nice for picnic the next day.... my mom use to do it and its fun!!!!
