Soda is nothing but aerated water which means that gases are dissolved in water.
When soda is exposed to atmosphere it has a property of losing the dissolved air. The air escapes the container. This reaction is called an exothermic reaction. In an exothermic reaction, energy is released. Thus the soda gets warmer.

Because everything eventually reaches room temperature (ambient temperature). So when not exposed to cold, the soda will get to room temperature, which seems warm when the soda started out colder than room temp. When the coffee is no longer exposed to heat , it will reach room temp, which will seem cool when it was hotter to begin with.

the coffee's going from hot to room temp, so it's getting colder
the can of soda is going from cold(they're usually from the ref or vending machine) to room temp, so it's getting warmer
