Low Fat Apple Cider Doughnuts with Maple Syrup Glaze

Ingredients
For Doughnuts
# 3 tablespoons granulated sugar (approximately) for preparing pans
# 2 cups all-purpose white flour
# 1 1/2 teaspoons baking powder
# 1 1/2 teaspoons baking soda
# 1/2 teaspoon salt
# 2 teaspoons ground cinnamon
# 1 large egg, lightly beaten
# 2/3 cup packed brown sugar
# 1/2 cup apple butter or fruit puree fat replacement
# 1/3 cup pure maple syrup
# 1/3 cup apple cider
# 1/3 cup nonfat plain yogurt
# 3 tablespoons canola oil

For Maple Glaze
# 1 1/4 cups confectioners' sugar
# 1 teaspoon pure vanilla extract
# 1/4 - 1/3 cup pure maple syrup

Directions

1. Preheat oven to 400 degrees F. Thoroughly coat the molds of 2 mini-Bundt pans with nonstick cooking spray or oil. Sprinkle molds evenly with granulated sugar, tapping out the excess. (If you only have 1 pan, bake the recipe in 2 batches.).

2. In a mixing bowl, whisk flour, baking powder, baking soda, salt and cinnamon; set aside. In another bowl, whisk egg, brown sugar, apple butter or fruit puree fat replacement, maple syrup, cider, yogurt and oil. Add the dry ingredients to the wet ingredients and stir just until moistened.

3. Spoon about 2 generous tablespoons of batter into each prepared mold, smoothing the surface.

4. Bake for 10 to 12 minutes, or until the tops spring back when touched lightly. Loosen edges and turn the doughnuts out onto a wire rack to cool. (If baking in 2 batches, cool the pan, clean it, then recoat it with cooking spray or oil and sugar).

Directions for Maple Glaze

1. In a bowl, combine confectioners' sugar and vanilla. Gradually whisk in enough maple syrup to make a smooth, thick glaze.

2. When the doughnuts are completely cool, set them, fluted-side up, in a wire rack over wax paper. Spoon some glaze over each doughnut, letting it drip down the sides. (Alternatively, dip the doughnuts in glaze.)

Yield: 1 dozen doughnuts


Loukoumades (Doughnuts in Scented Syrup)

ngredients:

Dough:
1/2 oz. fresh yeast or 1/4 oz. dried yeast
1 cup hand hot water
1 lb. strong plain flour
1 cup milk
1 tsp. sugar

Syrup:
1 cup water
1-1/2 lb. caster sugar, plus extra for coating
2 tbsp. rosewater
2 tbsp. orange flower water
2 tbsp. lemon juice
Oil for deep frying
Ground cinnamon
Directions:
If using fresh yeast, blend the yeast with the sugar and the water and set aside for 10-15 minutes until frothy. If using dried, sprinkle the yeast over the liquid and then leave until frothy.

Sift the flour into a bowl and make a well in the centre. Lightly beat the milk into the yeast mix and then pour into the flour. Beat well to make a very soft batter. Cover and set aside for 1 hour.

Beat again, then leave to rise again for another hour. The more times you do this the more elastic the dough will be.

To make the syrup, pour the water and lemon juice into a heavy pan and add the sugar. Slowly bring to the boil, then lower the heat and simmer until the syrup is thick enough to coat the back of a spoon.
Add the flower waters and simmer for a further 2-3 minutes. Remove from the heat and leave until cold.

Heat the oil for deep frying (190°C/375°F)- beat the batter well and using a wet teaspoon or a piping bag with a large plain nozzle drop small amounts into the hot oil. They will rise very quickly.
Turn them over and fry for 2-3 minutes until crisp and golden brown. Drain well and while hot dip into the syrup.

I do not make glazed doughnuts on the grounds that they're an excessive amount of problem. There used to be an episode of Good Eats that confirmed all of the steps to lead them to, nonetheless. If you wish a REALLY well doughnut, then you'll be able to lead them to like I do... I use the dough for SUGAR COOKIES directly out of the Betty Crocker cookbook. Make the dough and make your doughnuts then deep fry them after which roll them in granulated sugar... you can throw stones at glazed doughnuts while you style ones comprised of sugar cookie dough.
