so how could he be a prophet?

I answer this question posing a question. Do you think a young farm boy of nineteen or so, never advancing past the third grade, could ever translate into English whole books of two civilizations whose records were made in Reformed Egyptian? The translation was complete within an 80-day span by a young man never knowing of the existence of the two civilizations that migrated to the American continent at two separate times.
Do you think this same young man could invent things that these civilizations had accomplished, their histories and religions, with the bottom line that the resulting scripture was in accordance with the same teachings of the Holy Bible?
Joseph Smith was ordained of God to be His first prophet in the latter days. Since that time, the Church of Jesus Christ of Latter-days Saints has continued to have guidance and instruction from an ordained prophet to this day.
Incidentally, if a prophet can prophesy something that will come to pass, consider the fact that Joseph Smith had predicted the Civil War on 25 December 1832 and from where it would commence. Now when did the Civil War begin?*

If I understand correctly, Muhammad said that he was the "seal" of the prophets. This is interpreted as him sealing or closing the prophethood. However, just as followers of Islam consider Christ as the last of the Jewish prophets, could not Muhammad, as the seal, be referring to himself as the last of the prophets of Islam?
Why wouldn't God have a prophet now? Since the beginning, God has always had prophets. In each dispensation of time, he has called a messenger or messengers. God is an unchanging God who has said (Amos 3:7) that the Lord God does nothing save he revealeth his secret to his servants the prophets. Why would God now change the pattern that he had used for thousands of years? Either he is doing something and has a prophet or he is doing nothing, which I cannot believe.
The only source of ultimate truth, however, is God. For me, knowing the truthfulness of the prophet Joseph Smith, and our current prophet Gordon B. Hinckely, is vital to my faith. So, I have personally prayed to God and have felt through the Holy Ghost that they truly are prophets of God.

Mormons might find this insulting, but then again Mormons have some beliefs that are pretty insulting to others.
Oh, Muhammad was an illiterate pedophile. He married a girl who was only eight years old. And prior to that, he married a wealthy, older widow. If he hadn't he would have continued on as an obscure, illiterate peasant. He spread his new religion at the end of a sword. So if people want to call him a prophet, they can do it.
Some prophet, though. Doesn't seem like anything God would send, or I hope not.

Dude, if a Muslim says "For Allah" And tries to light his shoe on fire or drops a package, people run. If a Mormon drops a package or tries to light his shoe on fire and says "For Jesus" people just look at him funny. There is a reason people run when a Muslim tries to light his shoe on fire. Because now Muslim has become synonymous with terrorist. There is a reason for it. Muhammad was the original terrorist. In the Koran it says, Convert or kill infidels.(not in those exact words) And the crusades started because the raids on villages that either converted or killed "infidels" reached Europe. Who do you think is telling the truth? You tell me. How many buildings and people have Mormons blown up? I haven't heard of any yet.
Note:I'm not Mormon. I just don't think Muhammad was telling the truth.

Anybody can claim to be a prophet, and they have their reasons (and I do not mean this as a slam against any prophet). Personally, I don't believe in prophets. If God wishes to communicate with me, he is omnipotent and can do so without needing a mouthpiece. I do not, however, believe he does communicate with this world.

Many people have created religions for themselves but they are all in the grave. The only one who came back from the grave is the true Saviour. Would you rather follow a dead prophet or a living one?
