When they turn dark and small spots start to cave in. They have more flavor just before this happens than when fresh.

If they're kind of soggy to the touch. That just means the cells are starting to break down and all the liquid is coming out. Also if they're super dried out, that could be a bad sign too. Of course if there's visible mold. . . that's a no brainer.
