As the names imply, modified atmospheric packaging (MAP) involves packaging food in a gas-tight container that initially contains a desired mix of gases, whereas controlled atmospheric storage (CAS) goes a step further and maintains the desired gas mix by making any necessary changes as time passes and biological activity changes the gas mix within the container. MAP is easily used in small-sized food portions, while the economics of CAS restricts its use to larger-scale storage. The title of ref. 1 suggests that the article concerns both methods, but its emphasis is on MAP due to its wider use. Ref. 2 discusses CAS of grain.
