I'm not sure about this either - where did you hear that? Perhaps its because it is assumed Mohammed must have been progressive, given that he first worked for, then married an older, successful business woman. Or that he states that men should not marry more than 4 women and/or more women than he can care for. Or, perhaps becuase he stated, essentially, that beating a woman was the last resort in terms of getting her to comply with your wishes - now, that seems pretty unacceptable to me, but maybe in that era beating women was the first resort, and he tried to change that.
My best friend, who is a female Muslim, seems to feel that the Quran deals very lovingly with women - and she doesn't where a veil - it isn't required by the Quran, FYI.
Based upon my own personal, limited readings of the Quran, I haven't been too impressed with the treatment of women.
With regards to other minority groups - one of the pillars of Islam is to give to the poor. However, non-Muslims don't receive any protections (that I'm aware of) and are frequently disparaged as being less than human. So there you go.

The Quran in 9:29 commands Muslims to "fight all who dont believe in Allah." Killing without discrimination based on race or religion is Eqalitarian.
