I throw them in stove top stuffing. Also thrown them in chicken salad. If you like edamme (soy beans) you can used cooked shelled bean saute them in a little seasme oil with some green onions add the dried cranberries and serve or white rice or rice noodles.

This is what I do sometimes.
But a box of Pumpkin Bread, and when you mix all the ingredients add about 2 hand fulls of dried cranberries in the batter. I swear it works, cause I do it alot - we buy those huge bags of Costco cranberries, and I have to use them!

Servings: 1 Loaf
Ingredients:
1/2 C. Butter
1 Tbs. Grated Orange Peel
3 Large Eggs, Beaten
2 1/2 C. Flour
1 Tsp. Baking Soda
2 C. Fresh or Frozen Cranberries, Chopped
1 C. Sugar
1Tsp. Vanilla
3/4 C. Buttermilk
1/4 Tsp. Salt
3/4 C. Pecans, Chopped
Method:
Preheat oven to 350°. Spray bottom only of 9" X 5" loaf pan with cooking spray. Beat butter, sugar, orange peel and vanilla in a large bowl until light and fluffy. Add eggs, mixing well. Combine flour, baking soda and salt, add to creamed mixture alternately with buttermilk, beating at low speed just until blended. Fold cranberries and nuts into batter. Turn into prepared pan, spreading evenly. Bake until wooden pick inserted in center comes out clean, about 50 to 60 minutes. Cool slightly in pan. Remove from pan and cool completely on wire rack.

Chicken Breast With Dried Apricots And Cranberries
Ingredients
1 1/2 c dry white wine
1 c dried apricots
6 chicken breasts
1 lg red onion; halved and sliced lengthwise
1 ts ground coriander
1 ts ground cumin
1 ts paprika
1/2 ts dry mustard
1/4 ts cinnamon
Salt and pepper
1/2 c cranberries; dried
1 c chicken broth; regular strength
Instructions
Preheat oven to 375 degrees. In a saucepan heat wine just to boiling.
Remove from heat, add apricots, and soak for 10 minutes. Drain, reserving wine and apricots separately. In a large, heavy casserole arrange chicken pieces, skin-side up and sprinkle with onion, spices, salt, pepper, plumped apricots and cranberries. Combine reserved wine and stock and pour over all. Cover casserole tightly and bake until chicken is very tender, 50 to 60 minutes.
