I am getting married in June 2008 and we are trying to figure out what to have to eat at the wedding. We are having an outdoor's wedding at a park with waterfalls and we are wanting to have a picnic type wedding with sandwich meat of roast beef, turkey, and ham, but we are wondering what all types of other foods would go great as a "picnic"? I plan on making my wonderful potato salad but other than that, I am at a loss. Please help me, anybody that can think straight...lol

I know that I am planning this far in advance but the way that I figure it, i would rather have most of everything settled by then instead of being like all these stressful brides that I see like a chicken with its head cut off. I am just making lists of things to keep things open but the food will never change and neither will the fact that we are having an outdoor wedding. I hate indoors.

Sounds like fun...well, you can't go wrong with fresh fruits and veggies and the dips...baked beans or corn on the cob, pasta and pasta salads...bean salad, tossed salad.

First - do you have a back up plan? The only place I know of where you can have an outdoor wedding with no expectation of rain is Wyoming; we have 330 days of sun. Most other places don't even come close. I'm sure you don't like the indoors but what about the wildlife that comes with the outdoors; hot and buggy does not make for a fun time. I assure you that I would leave once the first mosquito from the waterfalls bit me. Also, how are you going to keep the flys out of the food? Weddings aren't just about the bride and groom and you would do well to consider your guests.
Ok you are wanting the standard picnic fare, pasta salad, tossed salad (no creamy dressing, just vinaigrettes) chips and pretzels, vegetable tray, fruit tray. I wouldn't do macaroni or potato salad unless it doesn't have mayo in it. Another problem with outdoors is the heat, food poisoning is really really bad. I make a good potato salad with really good olive oil and Tastefully Simple's seaoned salt which is a nice alternative for people who don't like mayo.

Weddings can cost an absolute fortune. my wife and i got married at the end of last year. we weren't willing to go into debt so we had a choice, blow our house deposit and have a huge affair or try and really keep costs down and buy a small place of our own. we went for the second. the truth is the people are the important part. we used our church hall and did a really nice afternoon tea, fancy cakes,biscuits and scones 9with jam and cream) barrista coffee a variety of leaf tea and cold drinks (no alcohol) we had friends and the church youth group helping out and it cost around about $6Au per head. in hind site the best thing about it was that it was simple and there was no stress involved, if your having a picnic keep it simple you don't need 14 types of salad and 5 meats, presentation will be a key, fruit salad is a good one as well, bakery bread presents much better than store bought, loose leaf lettuce presents much better that ice burg lettuce- don't go overboard. the things i remember are things like it was 46 degrees C and that my zipper broke before going down the isle. the food is simply to keep tummies silent.

Find some ideas to keep things chilled while being served. You can use low big tubs full of ice and set a bowl or plate of food in it. You have large baskets full of ice with a bowl in it.
Be creative. Food tastes best cold and is safer if it hasn't been out in the heat for even an hour.

i think that is a really awesome idea sounds like its going to be a blast!! keeping with the picnic theme are you having a campfire ? if so why not consider smores or something along those lines. Consider having different trays or stations set up like a make you own sandwich station with all the fixin's and chips and dip, pickles and different salads bean, potato, coleslaw macaroni and have a dessert station you could get a wedding cake shaped like a picnic basket and fill it with chocolate covered strawberries or different fruit. You could also get a watermelon hollowed out and re-fill it with fruit salad and melon balls, also you could include different pasteries they travel and keep well. Just dont forget the bug spray good luck to you !!

My daughter and I attended a Wedding Extravaganza a few months ago and they had a beautiful set up that I just loved. It started off with a long oval silver tray. In the center of it was a tall (12") styrafoam cone that was totally covered with fresh strawberries all over it and a big strawberry on top. All around the tray were assorted meats,cheese and fruit. It went like this:
roast beef,green grapes,cantalope,red grapes,turkey breast,green grapes,watermelon,red grapes,smoked ham,green grapes,cantalope,red grapes....then back to the roast beef and all the way around. It was so neat!!!
We also saw a chocolate fountain and they had all kinds of things that you could dip in the chocolate (marshmallows,oreos,pineapple chunks,grapes,apple slices,orange slices, banana chunks,graham crackers,and alot more I can't remember.) It was great!
The possibilities are endless for a picnic wedding reception!

It sounds like it will be beautiful. Finger food is always good. Fruit platters also sound like they would suit. Homemade pastries are great especially if there is an Aunt or Mum who has some great recipes. I think your wedding sounds like the way they should be not all high expense bulls*** that people seem to feel they must do. Back to basics and getting everyone involved makes it a truly memorable moment for all to smile upon. May i wish you and your Groom the very best of love and happiness as Husband and Wife.

If your having a picnic type spread then there is nothing wrong with chips, olives, pickles, beans and salads. They all go good with sandwich meat. If you have a friend or relative who likes to barbecue then have hot dogs and burgers also. Most people would love that. Sounds like a really nice wedding reception to me. You know if you are making the pic-nic like sandwiches---why not just make a salad bar combined with it?Just a lot of seasonal veggys and fruits that you can cut up and bag up ahead of time.Use baskets to hold the dressings,croutons,crackers, and bread sticks.If you are having children also, you can use baskets to hold cookies in. The cake is usually eaten by the grown ups.Make the table elegant by sreving the food in clear bowls and platters.Congratulations......

Make sure you get some of those mesh covers for the fruit...we had fruit served before our wedding and the flies ALL got into it. We were married at a lake as well. (your's sounds so pretty!)
Maybe some spinach dip with pumpernickel bread, fruit salads, maybe pies instead of a cake? or cupcakes?
