I have to confess that I'm not one of those people who eats a 'calorie controlled' diet'.

Lasagne is my comfort food.

It's such a faff to make, and takes ages to prepare, (and wash up after) but when you've next got an hour to spare - try the following...

Fry a chopped onion 'til it sort of goes soft (use sunflower oil) (3 mins)
Add the mince (400gr) and keep stirring until the mince goes brown (4-5 mins)
Add the quartered chestnut mushrooms (chopped in advance) and keep stirring until they, too, go soft.
Any sign of burning - the heat is too high.

Whilst all this is going on in the pan, be grating some very strong mature cheddar cheese, about 500gr should do it, and also shred some mushrooms through the cheese grater (these will be used in the cheese sauce).

You then add to the pan a lot of 'mixed herbs' (enough to dust the content of the pan), half a 200 gr. tube of tomato puree, a tin of chopped tomatoes, salt (to your taste) and ground black pepper (to your taste), and a few cloves of crushed garlic.
Stir for a few minutes.

Then you watch it start to bubble at the edges, turn it down and let it 'simmer'

By now, the 'red sauce' should be ready and so let it ...

Beef Curry, Rice and Chips. I was out drinking with my mates many, many years ago. We decided to drop into an Indian restaurant. I was a little tipsy, and thought I'd try something different. I ordered a meal I had never tried before. "Give me a very hot Beef Curry Rice and Chips please" It was a revelation. I have never enjoyed a meal so much since that day. I have ordered the same meal hundreds of times, but not one has come up to the standard of that drunken meal all those years ago. Harold Walters.
