Cheddar Macaroni Salad
Yield: 1 Salad
Ingredients
3 c medium shell macaroni
2 c cubed cheddar cheese
1 c chopped celery
1/2 c chopped green pepper
1/4 c chopped onion
1 c dairy sour cream
1 c mayonnaise or salad dressing
1/4 c milk
1/2 c sweet pickle relish
4 ts vinegar
1 1/2 ts prepared mustard
3/4 ts salt
Instructions
In a large kettle cook macaroni in a large amount of boiling salted
water until tender; drain. Cool to room temperature. Toss with
cheese, celery, green pepper and onion.
Combine sour cream, mayonnaise or salad dressing, and milk; stir in
relish, vinegar, mustard and salt. Toss with macaroni mixture.
Cover and chill for several hours.
Serve in a lettuce lined bowl. Garnish with green pepper rings if
desired.

Picnic macroni Salad.
8 ozs elbow macaroni, cooked and drained
1/2 c onions, chopped
6 ozs Spam Lite luncheon meat, cubed
1/2 c fat-free mayonnaise
1 c celery, sliced
2 ozs pimientos in jar, diced and drained
1/2 c sweet pickle relish
1 tbsp yellow mustard
In a mixing bowl, combine macaroni, luncheon meat, celery, pickle relish, onions, mayonnaise, pimientos, and mustard. Mix well. Place mixture in a bowl with a tight fitting lid and refrigerate for several hours before serving.

It's always been my favorite salad. It was disappointing, when KFC stopped having it. My recipe is packed.But here's one someone gave me, which is similar to mine-Macaroni Salad Recipe: 4 Servings, 1-1/2 cups each
Elbow macaroni, uncooked 12 ounces
Green pepper, chopped 1/2 cup
Salad dressing, mayonnaise-type 1/2 cup
Pepper 1/2 teaspoon
Garlic powder 1/4 teaspoon
PREPARATION TIME: 15 MINUTES
COOKING TIME: 8 TO 10 MINUTES
1. Cook macaroni according to package directions. Drain and cool.
2. Combine green pepper, salad dressing, and spices.
3. Add macaroni and toss lightly. Chill.
PER SERVING:
Calories 430
Total fat 13 grams
Saturated fat 2 grams
Cholesterol 0
Sodium 72 milligrams

MACARONI SALAD WITH HAM AND PEAS
1 pound elbow macaroni
an 8-ounce piece cooked ham
2 celery ribs
3/4 cup packed fresh parsley leaves
1 cup frozen tiny peas
1/2 cup mayonnaise
3 tablespoons fresh lemon juice
2 tablespoons milk plus additional if necessary
1/2 cup dried currants
Fill a 6-quart kettle three-fourths full with salted water and bring to a boil for macaroni. Cut ham and celery into 1/4-inch dice and chop parsley.
Cook macaroni in boiling water 5 minutes, or until just tender (using package instructions as a guide), adding peas to cook for last 2 minutes. In a colander drain macaroni and peas and rinse under cold water. Drain macaroni and peas well.
In a large bowl whisk together mayonnaise and lemon juice and whisk in 2 tablespoons milk. Add macaroni, peas, ham, celery, parsley, currants, and salt and pepper to taste and toss to combine well. Salad may be made 2 days ahead and chilled, covered. If salad looks dry, toss with additional milk before serving. Serve salad at room temperature or chilled.
Makes 8 servings.

I make it all the time, especially in the summer. Makes a cool, light supper on those hot nights when you really don't feel like anything big.
Cook your macaroni according to package directions. I like using the small seashells. Cut up radishes, cucumber, green onion, and bell pepper. To the cold macaroni, add Kraft mayo with a little mustard. Amount depends on how moist you want the pasta. Mix in your vegetables. Add a little dill weed and celery salt (because we don't like real celery), salt and a little pepper. For a meal, add in some left over diced chicken, turkey or ham.

Boil a small bag of macaroni noodles; while the noodles cook, dice 1 medium sized green pepper and 1 medium tomatoe.
Let noodles cool for a few minutes then mix athe veggies and the noodles add about a cup of Mayo or Miracle Whip which ever you prefer, I like Hellman's my hubby likes Miracle Whip, stir add salt and pepper to taste then chill for at least 30 to 45 minutes!!!

"Seashell Crab Salad" - 6 to 8 servings
2 cups uncooked shell pasta
2 cups cooked crab meat; chopped
2 cups sliced fresh cauliflowerets
1 medium zucchini; chopped
1/3 cup sliced green onions (scallions)
1/2 cup mayonnaise
1/2 cup bottled Thousand Island salad dressing
1 tbsp. lemon juice
1/4 tsp. pepper
Prepare pasta according to package directions; drain. In medium bowl, combine shells, crab, cauliflowerets, zucchini and onions. In small bowl, blend mayonnaise, Thousand Island dressing, lemon juice and pepper. Add to salad mixture; toss to coat. Cover; chill thoroughly. Refrigerate leftovers.

Yes it is very good, you can add what ever you like, sometimes I use cooked spagetti, cut veggies in chunks add tomatoes, red onions, cucumbers, zuchinni, celery, green, yellow & red peppers, add what ever spices you like, put in container, add 1 bottle of italian salad dressing, leave in fridge, overnight, it is yummy.
Then another way I fix it, use any kind of pasta you like, I like bowties, add chopped boiled eggs, celery, onions, sweet pickle relish, then I make a dressing, 1/4 cup miracle whip, 1 Tbsp mustard, splenda for sweetness, & a little milk, mix into salad. add whatever spices you like.Yummy, you will love both of these recipes, give them a try.Have a great day.
