run the chicken under hot water, it thaws pretty quick, but don't tell the guy who asked the question about decreasing water usage... he might be upset with me.

Lots of folks do not like to defrost chicken in the microwave but, I've found a way do do it with out ruining them.

Use a zipper freezer bag. Place the breasts in the bag add as much water as you can. Get all the air out of the bag. Place it in a large bowl. Set your microwave to defrost. Mine gives me pound options. I just set it to .5 lb and check it each time it stops resting for 3 minutes in between until it is thawed.

Alternate method, leave in package and run cold water over it until thawed. (takes much longer)

Defrost them for a few minutes. Get a serrated knife and sliced them thinly into strips. (It will slice easily while still partially frozen, and will thaw almost instantly) Brown some onion in a deep pan (or wok if you have one) in a little oil, throw the strips in with some soy sauce, a spoonful of honey & some veregtables & Voila! Stir-fry!

Make sure the chicken is THOROUGHLY cooked - let it simmer in the sauce for 10 mins or so. DON'T refreeze - Good luck!

You can put them in a pot, frozen, with a can of chicken broth and a can of campbell's mushroom soup. Add whatever veggies you like such as chopped carrots, chopped onions, chopped green peppers, garlic...whatever veggies float your boat. Then add a little salt and pepper. Not too much, you can always add more when its done. Bring it to a low boil, then let it simmer covered for at least 30 minutes. Serve over hot steamed rice. The chicken will be very tender and juicy. I do this and variations of it with pork all the time. have fun. No thawing required!

You can also run them under warm or hot water to defrost them a little. Then when they are partially defrosted, they will be easier to dice and you can stir fry them along with some cut up veggies (carrots, peppers, and broccoli together, maybe with some canned water chestnuts, are my favorites). Stir fry in some rice wine vinegar and soy sauce, and serve over brown rice for a quick, healthy, and tasty dinner.

The best way for quick thaw is to put the breasts in cold running water in a clean container. The cold water will thaw the breasts in less than 20 minutes. Then prepare the dish you were thinking of.

You can bake or poach(boil) them. OR Take them out of the freezer and run cold water over them to loosen the ice crystals and you can slice them and make a stir fry or curry. All you nned to do is cook some rice to serve with it. I did that the other night.

If they are boneless and skinless, sear in a hot skillet w/ a combo of EVOO & butter. As they thaw, sprinkle w/ kosher salt and cracked pepper, maybe a bit of thyme. When seared on both sides, deglaze pan w/ chicken stock and/or white wine, cover, lower heat, and simmer until chicken is done.

I would stew them with onion, carrot, garlic, and any vegetables you have in chicken broth and serve with rice or make dumplings. Add sour cream if you like.
