Ingredients

Almond Burfy

1 cup almonds 1 cup sugar
Milk enough to blend
Saffron a pinch
Ghee - 2 tblsp
Silver warq for decoration

Method

1. Soak almonds in boiling water for 5 minutes.
2. Peel out the skin of the almonds.
3. Blend the almonds and sugar in very little milk (just enough to blend).
4. Cook the mixture in a non stick cooking pan stirring continously.
5. Add the ghee and saffron and cook till it forms a ball and comes clean.
6. Spread the mixture on a greased cookie sheet and put a cling wrap on top of it and
roll it will a rolling pin to spread.
7. Decorate with silver warq.
8. Cut to desired shapes.

Kaju Burfy

Sugar - ¾ cup
Hot water - ½ cup
Cashew nut powder - 1 cup

Combine sugar with water in a microwave safe bowl and stir till the sugar is dissolved.

Cook on full power uncovered 6-8 minutes, stirring 3 times.( the syrup must form a soft ball when dropped in cold water)

Add 1 cup cashew powder. Beat till thick .Spread on a greased surface, cool and cut into pieces.

Spicy Cashew Nut Stir Fry ( Kaju Ki Subzi )

1 tbl sunflower oil
1 tsp black mustard seeds
1 tsp cumin seeds
10 x curry leaves
300 gm cashew nuts soaked for an hour
1/2 tsp turmeric powder
1/2 tsp chilli powder
1 tsp coriander powder
2 tsp lemon juice
2 tbl coriander leaves chopped
salt
Heat the oil in a pan and add the mustard seeds.
When they crackle add the cumin seeds and curry leaves.
Stir once.
Add the soaked cashew nuts and the powder spices.
Stir fry until all the ingredients are blended.
Season with salt and the lemon juice and mix well.
Serve hot garnished with fresh coriander
This recipe uses cashew nuts as the main ingredient and can be eaten as a vegetarian dish or an accompaniment to a meal.Serves 4

I've used this recipe during Diwali and my burfi was great. Give it a try.

150 gm cashewnuts
400 gm sugar
elaichi powdered
silver foil (optional)
500 gm khoya

Method

Dry grind the cashew
Mix khoya (grated) and sugar
Heat in a heavy pan, stirring continuously.
Once the sugar dissolves, add the cashew (powdered) and elaichi
Cooking, constantly stir till soft lump is formed and does not stick to sides
Roll on a flat surface to desired thickness and apply silver foil.

Process is not suited for making soft.You need to know what is the best process.Know it fast.
