Do you have any Cajun seasoning? Something spicy. I take it these are fillets, perfect. What I do is stuff them with whatever you have, Spinach, Shrimp, Ham, Sausage, Bread Stuffing you get the Idea. Roll the fish up tie it with string leaving a hole in the center for stuffing. Stuff them, put seasoning on a plate and dredge both sides and put them in a hot skillet with oil, it'll be quick and flip darken each side. If you used a stainless Steel pan then put them in the oven, pan and all, for 15 minutes @ 375. Remember the handle will be hot! There ya go, Enjoy

Old Bay is a very good seasoning for most seafood. Tilapia being a rather mild flavored fish takes seasoning well although don't overdo it. I would lightly dust the fish with the Old Bay - place a tablespoon of butter with approx same amount of olive oild and pan sear the fish on both sides just long enough to form a crust then put the fish in the oven until a knife inserted easily pulls it apart and becomes slighly flakey. The time would be determined by the thickness of the fish. As for cod - I still think it is best served battered and fried like fish and chips.

I think old bay is used more for fish boils and gumbo.Why dont you try sprinkling a little lemon juice and a little dill on fish and a pat of butter and a little paprika. I put about two inches of milk in my baking pan,it takes the fishy taste out of the fish. No kidding try it.Just bake for a few minutes until fork tender and take the fish out,especially good with some kind of flavored rice and cooked broccoli

Old Bay is a good seasoning, but it has MSG, or monosodium glutanate. A lot of people are very allergic to this additive.
For the best flavor, cook your thawed or fresh fish in the oven at 350 for 15 minutes. It will be very moist, as it should be.

Season with Old Bay, dot with butter, squeeze a little lemon over it. Broil it for 2-3 minutes, flip and cook 2-3 minutes more. It is done when it flakes.
