After boiling and cooling the eggs, depending on how many of us want a sandwich, I mash up the eggs but for every whole egg I mash, I take the yoke out of the next just because I prefer the white. Anyway, I salt and pepper that and then mix in Miracle Whip, I don't like mine too creamy and I also add mustard (and try not to let my youngest see me do it).

I boil my eggs in water with a touch of oil. The oil will help make the shells come off easier.

Once my eggs are done I take off the shells and dump them in a bowl. I take a sharp knife and chop them into very small pieces.

I then add salt and pepper, sweet pickles, a dash of hot sauce and mayonnaise.

I mix it all together and there you have it.

Some people like dill pickles in their egg salad. I don't. Sweet is better.

Store in the frig.

"Egg Salad Filling" - 2 cups

6 hard-cooked eggs; chopped
1/2 cup finely chopped celery
1 tbsp. minced onion
1/3 cup mayonnaise or salad dressing
1/4 tsp. salt
Dash pepper

Stir together all ingredients until well mixed.

Coursely chop 5-6 hard-boiled eggs.
Add REAL mayo, not salad dressing, about 3 heaping tbsp, (Depends on how much mayo you like.)
Finely chop one medium sized dill pickle. (Also works well with sweet pickle relish!)
Add 1 tsp Dijion or spicy brown mustard, for a little kick
Salt to taste

put eggs in a saucepan. add water to just cover the eggs. bring to a boil. turn down to a simmer, and let them simmer for 20 min. turn cold water on at tap, and put saucepan with eggs under water, and cold water bathe them. shell and rinse. chop eggs up in bowl. add mayo, salt and pepper. variations are added to personal taste. mustard, pickles; sweet or dill, celery, etc. eat and enjoy on lettuce leaves, bread, crackers, fingers, etc.

Hard boil 6 - 8 large eggs. Peel, rinse & coursely chop. Add a tbsp mayo, a little spicy mustard, celery salt & pickle relish. Stir together & place in serving dish, then sprinkle with papirika.....

I just use hard boiled eggs, a little mayo, salt and pepper, celery and maybe paprika. It all depends on your preference.

EGG SALAD SANDWICH

5 boiled eggs
1 tbsp. mustard
1 tsp. salad dressing
6 dill pickles
1/2 tsp. salt
1/2 tsp. pepper

In small bowl chop up eggs; add mustard, a little bit of salad dressing, chopped up dill pickles, a little bit of salt, a little bit of pepper, to give it more taste. Mix it all up and put on bread, then ready to serve.

~~~yummy,,,,ok,,,,for one sandwich: two hardboiled eggs chopped. 8 pimento stuffed green olives chopped. Lots of crushed black pepper. mix with some mayo,,,a little squirt of mustard. Chill for about 1/2hr Put on soft white sourdough bread,,,with some lettuce,,,cut in triangles,,,ohh tooo yummy!
