This recipe came from Entertainment Tonight, way back when. They had a segment on "Getting Ready for Oscar Night." They were showing some big fancy hotel where they were getting ready for the Oscar Night dinner that would be attended by all these famous Hollywood stars. And they were having salmon. The chef shared the recipe. It is by far the simplest, most elegant dish I have ever prepared, and it gets RAVES from everyone I've ever made it for. You can grill it, or prepare it in the oven under a broiler. Have passed this recipe along many times, and have actually been over to friend's homes for dinner, and they are serving....you guessed it...my recipe for...
OSCAR NIGHT SALMON
Coursley chop one cup of fresh mixed herbs, like basil, oregano, and tarragon....though you can really use any herbs you like.
Finely chop one to two garlic cloves (depending on your preference.)
Seed and dice 4 fresh medium Romano tomatoes
In a small glass bowl, add herbs, garlic, tomatoes, and 4 tbsp quality olive oil, enough to lightly coat the mixture. Gently stir together until evenly distributed.
Skin-side down, distribute the mixture onto the salmon fillet and evenly spread the mixture, covering the fillet with a thin layer of the mix. (The entire fish should be covered with about a 1/2 inch layer)
Lightly salt and pepper top of prepared fish.
Grill or broil, skin side down without flipping, until cooked through
You can play with this recipe to suit you, but it really is easy with some fabulous taste!! Looks very pretty, too!! I serve it with a brown and white rice mix, along with a pear and endive salad with a balsamic dressing. TOO GOOD!!
Good luck!!

THE BEST SALMON:(Cooked in the oven) Is to use LEMON PEPPER, with the Salmon Coated in Olive Oil....& salt and garlic......pre heat the oven, around 300-350 depending on your oven. I make a broiled salmon with garlic, salt, pepper, lime juice which are key ingredients. Then you could put whatever you wanted like cilantro on top (it's a great flavor). I also use parsley.

Marinate salmon in your favorite italian dressing for a few hours. Take a sharp knife & make a few shallow slits in top of fish. Rub with minced garlic, sprikle w/salt & pepper & place on baking sheet sprayed with pam skin side down & broil til done - fish will turn pink & flake. Goes great w/garlic rice!!

BROILED SALMON WITH BASIL
2 tbsp. olive oil
1 clove minced garlic
1/4 c. white wine
2 tbsp. lemon juice
1 c. fresh basil (or 1/2 c. parsley & 2 tbsp. dried basil)
1/4 c. grated Parmesan cheese
1/2 tsp. Dijon mustard
4 salmon steaks, approx. 1 1/4-1 1/2 lb. fish
Dash cayenne pepper
Sauce: Put all ingredients except fish and cayenne pepper in blender. Blend until herbs are fine. Put 1/4 of sauce in bottom of baking dish. Mound rest of sauce over fish. Broil until done.
BROILED HONEY-LIME SALMON WITH
TARRAGON
2 tbsp. Dijon mustard
Juice of one freshly squeezed lime
2 tsp. olive oil
1 tbsp. honey
1 1/2 tsp. dried tarragon
2 tbsp. dry or semi-dry sherry
1/4 tsp. salt
1 1/4 to 1 1/3 lbs. salmon fillets, 1/2 to 5/8 inch thick
Nonstick vegetable spray
1. To make the marinade, thoroughly combine the first 7 ingredients.
2. Place the salmon fillets in a shallow, nonmetal dish and top with the marinade. Turn to coat the other side. Marinate in the refrigerator for about an hour, turning once or twice.
3. Preheat the broiler. Coat the broiler-pan rack with the nonstick spray.
4. Place the salmon on the rack, skin side down. Spoon the marinade over the fish.
5. Broil the fish 4 to 6 inches from the heating element for 5 to 6 minutes or until the fish is done. (No need to turn.)
Makes 4 servings. Salmon's special flavor is highlighted by Dijon mustard, lime juice, and tarragon. Honey adds a slightly sweet accent. Serve the fish with fresh lime wedges.
Fish alternatives: Mako shark, swordfish, bluefish, tuna, pompano, freshwater trout, mahimahi, sablefish, whitefish
LEMON BUTTER BROILED SALMON STEAKS
About 35 minutes before dinner:
1. Preheat broiler 10 minutes or as manufacturer directs. Into 1/4 cup mayonnaise or salad dressing stir 2 teaspoons prepared mustard. In small saucepan, over low heat, melt 2 tablespoons butter; blend in 1 tablespoon lemon juice, 1 teaspoon paprika, 1/8 teaspoon each of dried marjoram and pepper.
2. Lay two fresh salmon steaks, 3/4 inch thick, on foil lined broiler pan; brush with butter mixture. Broil, about 2 inches from heat, for 8 minutes or until golden, brushing once with butter sauce. Turn, brush with butter sauce, then broil 5 to 7 minutes or until salmon flakes easily, but is still moist. Serve, sprinkled with 2 tablespoons snipped parsley and garnished with 2 lemon twists; pass mustard sauce. Makes 2 servings.
For 4: Double ingredients; prepare as above; 1/4 cup commercial sour cream, seasoned to taste, may replace mayonnaise in mustard sauce.

No, But i did try and many times to eat soup with a spoon, especially if a soup is thick (you can thicken the soup effectively by adding some flour). It takes more time, so I enjoy it longer
