Any kind of casserole freezes really well. Also, stews and chili. I have tried this before because I used to work nights and I would cook meals for my family on Sundays, freeze them and then pull them out to defrost before I went to work during the week. You can also separate the meal into portions so that you only have to reheat what you know you need. The meals that worked best for me were casseroles like shepherd's pie, goulash, tator tot casserole. For side dishes, just buy frozen veggies. Since you can get them in big bags, all you have to take from the freezer is what you think will be eaten. Also, meatloaf freezes pretty well and so does hamburger helper. Practically anything you can reheat in the microwave would freeze really well. Although, I would stay away from stuff like fried chicken, steaks and chops. They reheat fine. But the taste always seems kind of off. Hope this helps you out. :)

I don't think a casserole would keep for longer that a day or two. If that's enough time, then do that. Otherwise, tomato sauce keeps for a week, as well as the meatballs! You can make a stew, which always tastes better a couple days later. For a stew side, all you need is some fresh bread and butter. I have made lasagna as well, and reheated it within a week. I won't eat anything from the fridge that's been stored over a week. What else???? Meatloaf can keep well, just cut it into slices before you pop it into the microwave or in the oven (covered). It will heat faster that way.

Beef stew tastes better after it has been cooked and stored in the refrigerator after a couple of day.. Try buying chuck or top, bottom round portion of beef, and stew it with carrots, onions, and clerery in simmering water for two hours. Keep the top off and add herbs about 30 minutes before you take it off the stove top.

lasanga freezes great, just don't bake it. if you want you can pack it away in those foil pans, in smaller batches so you can bake them off in smaller sizes, for two or four whatever your situation is.

same with any casserole.

i also marinate a lot of my meats and freeze them, then i take it out the night before and just cook it when i get home.. takes no time at all.
