Barbecue Chicken Sandwiches:
1 3 1/2- to 4-pound rotisserie chicken, meat shredded (about 5 cups)
1 to 1 1/2 cups barbecue sauce
1/4 cup pickled jalapeños, roughly chopped (optional)
4 hamburger buns
Potato chips (optional)
In a bowl, combine the chicken, barbecue sauce, and jalapeños (if using). Divide the mixture evenly among the bottoms of the buns and sandwich with the tops. Serve with potato chips (if using).
Yield: Makes 4 servings

Baked Chicken
Just season the meat well with some seasoning salt & garlic or salt, pepper & garlic, put in a baking pan & cover. Cook in oven @ 325 degrees. I always let mine cook for at least 3 hours. After it's cooked for about 2 hours uncover it so the outside can get brown. When it covered the mean gets tender, but it's all white & doesn't look appetizing. Also, turn the meat every hour. Once the chicken is a nice brown & the juices on the bottom of the pan have become sticky & somewhat thick it should be finish. I recommend using a disposible foil pan.

ok you will need
1 medium white onion
2 chorizos
1 bell pepper ( color is not important unless you want to mix and match
4 chicken breasts
1tsp paprika
1tsp chili powder
pico de gallo sauce or salsa like the one from chips. or the mexican green sauce.
pepper and salt to taste or even better adobo
cook the chorizo with the peppers and onions on an ungreased non stick skillet or pan (Med high heat). when the chorizo cooks it will release some fat that will cook the chicken. once the onions and peppers are ready add the lightly seasoned (salt/pepper or adobo) chicken breasts (they will absorb some of the chorizo flavor). add the paprika and the chili powder cook until they are cooked thru, then add the sauce let it simmer for 5 minutes covered in low heat.
the whole prep and cook time should take no less than 30 minutes
I use this recipe as a burrito or fajita filling. it is very good. I made it once for a work thing and people just ate it up
If you need to make a bigger batch multiply amounts by 2

CHICKEN TETRAZZINI
1 lb. pasta, cooked
1/2 pound fresh mushrooms
1 stick butter
2/3 cup flour
1 large onion, sliced
5 cloves garlic, peeled and chopped
4 c. chicken broth
2 c. light cream
1/4 cup dry sherry
4 c. diced chicken, cooked
1 c. grated Parmesan cheese
1/3 teaspoon garlic powder
Salt and pepper to taste
Cook and drain pasta according to package directions. Slice the mushrooms 1/8 of an inch thick and sauté in 2-3 tablespoons of the butter, along with sliced onion, and chopped garlic until lightly browned. Combine the remaining butter with flour and add chicken broth, stirring over low heat until thickened. Add the cream, salt, pepper, sherry, and garlic powder.
Divide the sauce in half. And one half of the chicken meat, and half of the mushrooms and cooked pasta. Butter a casserole dish and turn the pasta mixture into the casserole leaving a well in the center of the pasta.
Turn remaining cooked chicken half into the center of the pasta mixture. Top with Parmesan cheese, and bake uncovered at 400 degrees Fahrenheit for 20 minutes.
Optional: may also top with butter to breadcrumbs and grated cheddar or American cheese.

Not only is this recipe easy, but it tastes great.
Chicken Carbonara
2 teaspoons olive oil
4 ounces thinly sliced pancetta, chopped (If you don't have it, used smoked (not Maple) bacon)
2 teaspoons minced garlic
2 1/2 cups whipping cream
1 cup freshly grated Parmesan
8 large egg yolks
1/4 cup chopped fresh basil leaves
1/4 cup chopped fresh Italian parsley leaves
Salt
1 pound spaghetti
4 cups coarsely shredded chicken (from 1 roasted chicken)
Freshly ground black pepper
1/2 cup chopped walnuts, toasted
1 tablespoon finely grated lemon peel
Heat the oil in a heavy large frying pan over medium heat. Add the pancetta and garlic and saute until it is brown and crisp, about 8 minutes. Cool slightly.
In a large bowl, whisk together the cream, cheese, yolks, basil, and parsley to blend.
Meanwhile, bring a large pot of salted water to a boil over high heat. Add the spaghetti and cook until it is just tender but still firm to the bite, stirring occasionally, about 10 minutes. Drain.
Add the chicken to the pan with the pancetta and stir to combine. Next, add the spaghetti and the cream mixture and toss over medium-low heat until the chicken is heated through and the sauce coats the spaghetti thickly, about 4 minutes (do not boil or you might end up scrambling the eggs). Season the pasta, to taste, with pepper and salt if needed (the pancetta will likely add all the salt you need). Transfer the pasta to a large wide serving bowl. Sprinkle the walnuts and lemon zest over, and serve.

This is sooo good. You can serve with some type of potato dish, a nice salad, and maybe some steamed veggies. (or of course, whatever your hubby likes)
Baked Delmarva Chicken
2 eggs
2tsp worcestershire
1 tsp onion juice
2 (3lb) chickens, cut into serving size
2c. bread crumbs
1tsp sage
1/2tsp paprika
pinch garlic salt
1/2tsp salt
1/8tsp pepper
1/4c. veg oil
4 slices bacon
1/3c. milk
Preheat oven to 350*. Beat eggs, worcestershire and onion juice until thoroughly mixed. Dip chicken pieces in this mixture. Combine bread crumbs, sage, paprika, garlic salt, salt, and pepper. Roll chicken in bread crumb mixture. Pour oil in flat baking dish, arrange chicken in dish, spread bacon slices over chicken. Bake for 1 hour, then add milk. Cover with foil and cook and other 15-20 min. Remove from oven and serve hot.

Rosemary Lime Chicken
4 boneless skinless chicken breast halves
2 TBS canola oil
1/2 c chicken broth
1/4 c lime juice
2 tsp rosemary, crushed

"Parmesan-Crusted Chicken" - 4 servings
1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
4 boneless, skinless chicken breast halves

Combine mayonnaise and cheese; spread on chicken. Sprinkle with bread crumbs. Bake at 425* - 30 minutes or until thoroughly cooked.
"Spinach Crab Chicken" - 4 servings
1/2 cup finely chopped onion
1/4 cup chopped fresh mushrooms
1/4 cup finely chopped celery
3 tbsp. butter
3 tbsp. all-purpose flour
1/2 tsp. salt; divided
1 cup chicken broth
1/2 cup milk
4 boneless, skinless chicken breast halves
1/8 tsp. white pepper
1/2 cup dry bread crumbs
1 (6 oz.) can crabmeat; drained, flaked and cartilage removed
12 fresh spinach leaves; chopped
1 tbsp. minced fresh parlsey
1 cup shredded Swiss cheese
Hot cooked rice
For sauce, in a skillet, saute the onion, mushrooms and celery in butter until tender. Stir in flour and 1/4 tsp. salt until blended. Gradually add broth and milk; bring to a boil. Cook and stir for 1-2 minutes or until thickened. Remove from heat.
Flatten chicken to 1/4" thickness; sprinkle with pepper and remaining salt. In a bowl, combine the bread crumbs, crab, spinach and parsley; stir in 1/2 cup sauce. Spoon 1/4 cup down the center of each chicken breast half. Roll up; secure with toothpicks. Place seam-side down in a greased 13x9x2" baking dish. Top with remaining sauce.
Cover; bake at 375* for 35-45 minutes or until juices run clear. Sprinkle with cheese; broil 4-6" from heat for 5 minutes or until lightly browned. Discard toothpicks. Serve with hot cooked rice.

This is called NO PEEK CHICKEN . Easy and delicious!
1 cup uncooked rice
1 can cream mushroom soup
1 can cream of celery soup
1/2 soup can milk
3 tbls. butter
1 pkg. onion soup mix
1 chicken, cut up
pour rice, mushroom soup, celery soup, milk and butter in
sauce pan and heat til butter is melted. Add 1/2 of the envelope of onion soup mix into the rice/soup mixture and stir well. Place
in greased 9x12 baking dish. Lay chicken pieces evenly on top
of the mixture. Sprinkle remaining dry soup mix on chicken.
Cover tightly with foil and bake 2 hrs. in 325 degree oven. DO
NOT PEEK DURING COOKING.

My favourite is you stuff the chicken with garlic - absolutely full, lots of garlic, can you get any more in? do so.
Then you bake it in a covered dish til its just about falling off the bone. It really is very very nice, moist, tender and it hardly tastes of garlic at all for some reason.

Chicken is a crappy birthday dinner.
Make him a New York Strip steak, 12 ounces, BBQ from each side for 6 minutes and season with sea salt and pepper.
Serve with mashed sweet potatoes (add shot of Bourbon, 1 ounce of butter and a dose cinnamon) and perhaps some green asparagus (and poor molten butter over this one).
He'll love that.
