This is about as close as I have gotten to a "real" Philly Cheesesteak.
Philly Cheesesteaks with Fontina and Sauteed Onions
3 tablespoons vegetable oil, plus more as needed
4 medium red onions, sliced into 1/4-inch thick rounds
Salt and pepper
2 pounds top round, semi-frozen
1/2-pound fontina cheese, cut into small cubes
4 sub rolls
Heat 3 tablespoons oil in a nonstick skillet over high heat. Saute the onion slices until wilted and just starting to take on some color, stirring all the while, about 7 minutes. Sprinkle onions with salt while cooking.
Slice the top round into very thin slices. Partially freezing the meat enables you to slice it very thinly. (If you can, get the butcher to do this for you. It makes your job a lot easier!)
Remove the onions from the skillet. Salt and pepper the steak slices and then saute them in the same skillet, in batches until cooked through, about 45 seconds per side. Repeat process for the remaining steak slices, replenishing oil as needed.
Meanwhile, melt the cheese cubes in a microwave-safe bowl on low power for a couple minutes or until completely melted.
Cut each roll down the middle lengthwise. Fill each roll with a good helping of steak slices and top with the melted cheese and sauteed onions.
You can also add mushrooms with the onions and sautee them if you like. Also, if you like Cheesewhiz, that is "more traditional" cheese of choice, but I like the flavor from the fontina better. American or Provolone cheeses would also work.

Straight from Philly:
Start with good beef. Pat’s uses sliced rib-eye (Pat's is #1 in Philly).
Shave the beef very thin so it cooks quickly and remains tender.
Use a fresh high quality Italian roll - Amoroso’s is a favorite.
Decide if you want your steak with or without fried onions.
Decide if you want a steak or a cheesesteak. If you elect a cheesesteak you need to decide on American cheese, provolone or the Philly favorite "cheez whiz."
Any add-ons? Mushrooms, peppers, pizza sauce, tomatoes? You decide. It’s your sandwich.
Start to cook. Sauté the onions, peppers and mushrooms until soft.
Fry your steak until brown but not crispy or burned. You can mix in the fried vegetables now or add them at the end.
If you elect American cheese or provolone place the cheese on the meat until slightly melted. If you choose Cheez Whiz just smear it on the roll.
Place the roll over the meat/cheese/vegetables and scoop it into the sandwich.
Garnish your sandwich with pizza sauce, hot or sweet peppers or pickles as you choose.
Enjoy your Philadelphia cheesesteak.
Tips:
Using the best beef available is the key.
Don't overcook the ingredients.

Ingredients
16 ounces Grade A top round, sliced very thinly

1 (6-ounce) jar Cheese Whiz
4 hero rolls
Directions
Begin by cooking the meat on a griddle or in a large
skillet until browned. Season with salt and pepper.
Saute the onions in the same skillet until caramelized and browned, about 10
minutes.
Heat the cheese whiz in the microwave.
To serve, slice the rolls, place the meat in the roll, top with the caramelized
onions, and spread the cheese whiz on top.

Open-Faced Saucy Philly Cheesesteak Sandwich:
Use your favorite bread for this sandwich. The deli roast beef tastes terrific but bumps the sodium content up. Feel free to use a lower-sodium version.
Cheese Sauce
1 teaspoon olive oil
1 1/2 cups red bell pepper strips
1 1/2 cups yellow bell pepper strips
1 1/2 cups vertically sliced onion
1 tablespoon balsamic vinegar
1 teaspoon sugar
1/4 teaspoon dried oregano
1/4 teaspoon garlic powder
4 (2-ounce) slices bread, toasted
3/4 pound thinly sliced deli roast beef
2 tablespoons chopped fresh parsley
Prepare Cheese Sauce; keep warm.
Heat oil in a large nonstick skillet over medium-high heat. Add bell peppers and onion; sauté 8 minutes or until tender. Stir in vinegar, sugar, oregano, and garlic powder.
Preheat broiler.
Place the toast slices on a baking sheet. Top each toast slice with 3 ounces roast beef, 6 tablespoons Cheese Sauce, and 3/4 cup bell pepper mixture. Broil for 1 minute or until the sandwiches are thoroughly heated. Sprinkle the sandwiches with chopped parsley.
Yield: 4 servings

PHILLY CHEESE STEAK
4 oz. flank steak slices
1 French roll
1/2 oz. green pepper, juilenne
1 oz. sauteed mushrooms, sliced
1 oz. sauteed onions
2 slices Mozzarella cheese
5 oz. cottage fries
1 endive
1 Kosher pickle spear
May substitute for cole slaw.
Grill slices of flank steak in butter. Grill green peppers 1 minute. Split French roll on 1 side. Butter and grill until warm. Take peppers, onions, mushrooms and put on top of flank steak. Top with Mozzarella cheese. Cover for 1/2 minute with lid.
Put in French roll and cut at an angle. Put on plate. Deep fry cottage fries and put on plate. Put on garnish.
