I had chili last night and it was SO good, I know its inexpensive to make, but does anyone have a quick/easy and good recipe for some chili? I like chili not too soupy but not too chunky either, right in the middle! Thanks!!!

2 pounds ground beef sirloin
1 tablespoon extra-virgin olive oil
Salt and pepper
1 tablespoon Worcestershire sauce
1 medium onion, finely chopped
4 to 6 cloves garlic, finely chopped
1 red bell pepper, finely chopped
1 jalapeno pepper, seeded and chopped
3 tablespoons dark chili powder,
1 tablespoon cumin
1 cup beef stock or broth, 1/2 a 14-ounce can or paper container
1 (14 1/2 ounce) can diced tomatoes
1 (8-ounce) can tomato sauce or tomato puree
2 (15-ounce) cans black beans, drained (You can use ANY type of bean you like)
2 tablespoons chopped fresh cilantro, a handful, optional

In a large deep skillet or pot (cast iron works the best), brown ground beef in oil over high heat. Season meat with salt and pepper, then add Worcestershire sauce. Reduce heat to medium high when the meat is browned and crumbled, then add onion, garlic, red peppers, jalapeno. Season veggies and meat with chili powder and cumin. Cook veggies and meat together 5 minutes. Stir in broth and scrape up pan drippings. Stir in diced and pureed tomatoes and beans. (You could also add in frozen corn or drained canned corn now as well.) When the mixture comes to a bubble, reduce heat to simmer. Cook it at a simmer until it gets to the consistency that you want. Stir frequently! Do not cover!!!
Add the cilantro right before service.

You can serve this with chips, crackers, rice, shredded cheese (any kind you like), or sour cream.

Leftovers make a really good taco salad!

These are OK recipes for Eastern dudes, but they would be an abomination in Texas. Texans DO NOT put beans in chili. They also rarely use ground beef. Instead the beef is cut into cubes between 1/4 and 1/2 inches..Other than that you can wing it, except that the REAL recipes call for peppers so hot as to be almost inedible for Easterners

Super easy: saute a little garlic and onion, fry meat of choice (ground beef, lean). Drain any grease. Add chili-style stewed tomatoes or chopped fresh tomatoes with chili powder. Canned or fresh sliced mushrooms, canned pork and beans, black beans, kidney beans. To suit, you may add a little brown sugar or tabasco sauce or condensed tomato soup. Simmer for at least half an hour. The longer it simmers, the more the flavors will meld together. Serve with a little sharp cheddar cheese on top.

This is my recipe, adapted from my mother's, which is adapted from her mother's. i.e. start here and make it how you like it.

1 lb bacon, cut into one-inch pieces
2 lb ground beef
1 large white onion, diced
4 cloves garlic, crushed
3 28 oz jars spaghetti sauce
1 28 oz can baked beans
1 15 oz can black beans
1 15 oz can dark red kidney beans
1 15 oz can Great Northern beans
1 15 oz can yellow corn
3 Tbsp chili powder
1 Tbsp Cumin
1 Tbsp crushed red pepper flakes
Black pepper and Tabasco sauce to taste

Prep time: 45 minutes Cook time: 1 hour, 1 day, 1 hour

Preheat oven to 350° F
Cook bacon pieces over medium-high heat until cooked, but not crisp. Drain bacon, reserving 2-3 Tbsp of the bacon fat to cook the onions. Put drained bacon into 6 qt or larger pot. Brown ground beef. Drain and put into pot. Heat reserved bacon fat over medium-high heat, and then add the diced onion. Cook the onion until soft, but not brown, add to the pot. Add the spaghetti sauce and baked beans. Rinse and drain the black beans, kidney beans, and the Great Northern beans, put into the pot. Drain the corn, add it to the pot. Add all remaining ingredients to the pot, stir well.

Cover pot, place in oven. Cook for one hour. Remove from oven, put in refrigerator and allow chili to cool down. The next day, preheat oven to 350°. Remove chili from refrigerator, remove lid carefully. There should be condensation on the lid, be careful not to drain it into the chili. If there is any fat solidified in the chili, remove it and throw it away. Re-cover chili and cook for one hour. Chili is now ready to eat.

You can eat it the first day, but it tastes better after sitting.

I have also made it in a crock-pot and it does well. Just make sure you use one of those crock-pot liners or cleanup will be hell.

buy the beans in a can kidney beans are best tomato's fresh garlic onions some chili seasoning . it really simple you cant go wrong . get some cheese longer you let it set after cooking the thicker its gonna get . the next day after cooking its even better as for meat i use chucks of beef not ground beef brown the meat first along with the onions then add beans some people eat it with rice some with noodles . i like mine with some cornbread and corn chip .

EASY TASTY CHILI

1 lb. ground beef
1/2 onion (diced)
1 can rotel tomatoes
1 pkg. chili mix (any kind)
water as directed on chili mix
1 can baked beans (any kind)
shredded cheddar or mexican cheese

Brown ground beef with diced onion until done. Drain off excess grease and rinse with hot water if needed.
Chop Rotel tomatoes in the blender (optional). Add tomatoes, chili mix, and water to the beef and cook down for about 5 minutes or so. Add beans and continue to cook until beans are warm.

Individually sprinkle with cheese and serve with crackers or cornbread.

All-American Chili:

6 ounces hot turkey Italian sausage
2 cups chopped onion
1 cup chopped green bell pepper
8 garlic cloves, minced
1 pound ground sirloin
1 jalapeño pepper, chopped
2 tablespoons chili powder
2 tablespoons brown sugar
1 tablespoon ground cumin
3 tablespoons tomato paste
1 teaspoon dried oregano
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
2 bay leaves
1 1/4 cups Merlot or other fruity red wine
2 (28-ounce) cans whole tomatoes, undrained and coarsely chopped
2 (15-ounce) cans kidney beans, drained
1/2 cup (2 ounces) shredded reduced-fat sharp cheddar cheese

Heat a large Dutch oven over medium-high heat. Remove casings from sausage. Add sausage, onion, and the next 4 ingredients (onion through jalapeño) to pan; cook 8 minutes or until sausage and beef are browned, stirring to crumble.

Add chili powder and the next 7 ingredients (chili powder through bay leaves), and cook for 1 minute, stirring constantly. Stir in wine, tomatoes, and kidney beans; bring to a boil. Cover, reduce heat, and simmer 1 hour, stirring occasionally.

Uncover and cook for 30 minutes, stirring occasionally. Discard the bay leaves. Sprinkle each serving with cheddar cheese.

Note: Like most chilis, this version tastes even better the next day.

Yield: 8 servings (serving size: 1 1/4 cups chili and 1 tablespoon cheese)

Texas Chili
Ingredients:

2lbs. Ground Beef
1/2 cup chopped green pepper
1 cup chopped onion
28oz. canned cut up tomatoes
1-3/4 cups tomato sauce
5-1/2 cups cooked pinto beans, drained
2 Tbl chili powder
2 tsp ground cumin
4 tsp salt
1-1/2 tsp dried oregano
1 lg. can diced chilies (or 1/4 cup chopped jalapeno peppers)
4 tsp hot pepper sauce


Directions:

Brown ground beef in large kettle (dutch oven). Add green pepper, onion, tomatoes, tomato sauce and beans; cook on medium heat for one hour; add spices, diced chilies or jalapeno peppers and hot pepper sauce; cook 2 hours longer. *Make sure you cook your pinto beans first.

If you don't know how to make it, I will not give you the recipe that starts with dry beans. Save that for another time.

In skillet, fry chopped onion, green and red pepper and ground beef.

In a thick bottomed pot add a can of chooped tomatoes, two cans of chilli beans, chilli poweder, salt, garlic and a small amount of crushed red pepper. Add one can tamatoe sauce. Cook. Variations, use taco sauce in recipe. Another variation, use canned ragu (makes it sweeter).

Have fun, there is no wrong way to make it (unless you start adding cookie spices!! You can add celery, chopped fresh tomatoes, even taco bell salsa!!!

IF you main hot chili, its simple you take some red hot pepper and some olive oil with some garlic and spices some salt may be, then you mix them in the blender.
