Sugar Pie's answer is most misleading. Although ice wine can be made from muscat grapes most ice wines are not. Sugar Pie
may have been confused by her limited knowledge being affected by the fact that there is a Californian muscat "ice wine" (Bonny Doon) that has recently become chic and popular in the USA (where I suppose she lives). I just put ice wine in quotation marks because legally it is not a true ice wine and it cannot be labeled as ice wine - the grapes are frozen after being harvested, not by weather while on the vine, but most American consumers who buy it still call it as an ice wine (the label uses the French term for wine made from picked grapes then frozen: vin de glacier, which literally translates to 'wine made like ice cream is made').

She is right to tell you that any really good wine specialty retailer should have a small selection of true ice wines. They are usually quite expensive. The greatest (and most costly) come from Germany and Austria. In North America the next most commonly sold ice wines are from the Niagara Penninsula appellation of Ontario but I am unaware if any of these are exported to countries other than the USA.

Ice wine (or icewine or Eiswein in German) is a type of dessert wine produced from grapes that have been frozen. The sugars and other dissolved solids do not freeze, but the water does, so the result is a concentrated, often very sweet wine. The effect is comparable to the freeze distillation that was traditionally used to make applejack and similar beverages, but in the case of ice wines, the freezing happens before the fermentation, not afterwards. Unlike other dessert wines (such as Sauternes, Beerenauslese, or Trockenbeerenauslese), grapes for ice wine tend not to be affected by Botrytis cinerea or Noble Rot. This gives ice wine its characteristic of refreshing sweetness balanced by high acidity. When the grapes are free of Botrytis, they are said to come in "clean."

any good wine store....Inskillin is my favorite....real ice wine is expensive ...inskillin is about 100 a bottle
