Dominican Republic has many all inclusive resorts, but it is not safe to go sightseen out of the hotel property. In other words, you will enjoy a beautiful resort and the beach.
I encourage you to check out Puerto Rico. Puerto Rico is a US territory, so you don't need a passport and they use US currency. Besides great resorts and hotels, there are so many other attractions that 1 week won't be enough. Since you said that you both enjoy nature, animals, and sports Puerto Rico has so many options for both of you. Read this...
There is no place quite like a tropical volcanic island, and no island in the Caribbean quite like Puerto Rico. The geography of the island is very unusual, as it encompasses distinctly different kinds of topography and microclimates in a relatively small area.
A rugged mountain range runs across the center from east to west, which often prevents rain clouds from passing to the south. The north side of the island is covered by dense vegetation, karst formations, and rushing streams, while, the south side is sun-toasted terrain, home to tropical dry forests and many species of exotic birds. Puerto Rico is only about 100 miles long and 35 miles wide, so its most distant points are only a three-hour drive apart. It also means that just about every tropical landscape in existence is a short trip from wherever you happen to be!
Explore our top Nature and Adventure sites to learn more about all the fascinating flora and fauna on the island, and the variety of ways you can see them. From easy leisurely drives and walks to serious hiking, rock climbing, spelunking, kayaking, and camping on deserted islands, the nature lover and adventure traveler can find it all in Puerto Rico.
Visit this link for more info on wildlife, hiking, ecotours, canoeing, and caving. Also there is an interactive map that will help you to find the right accomodation for you.

Farai is correct- Dominica (not Dominican Republic) is probably the most pristine island in the Caribbean and has some pretty good diving(and does offer much for those who like hiking, etc); it's just so much more difficult to get to than other islands since I don't believe they have a large commercial airport to this day (you either have to get their via boat or a "puddle-jumper" plane from one of the other islands). I also agree with Scorpio- the Domincan Republic has some of the best all-inclusive resorts anywhere but leaving the resorts may not be the safest thing to do (especially by yoursleves). A couple of suggestions just by the little info you have given- Cozumel has good snorkeling and diving and is a place you can walk safely to explore/soak in the local culture; you can also take the submarine to further explore sea-life and/or take the ferry across to Playa Del Carmen or Cancun for further activities (Playa Del Carmen, Mexico may be another choice). Costa Rica is a great place for wildlife and also offers diving along both coasts; another Central American location you may check out is Roatan or Belize (never been to either of these places but have "studied" them as a vacation spot for years) Otherwise, just about every Caribbean island(have been to quite a few of them) has spots for diving/snorkeling (some better than others), have their own unique history and wildlife, have their own unique charm and most are quite safe/tourist friendly- you should probably just google/search each Caribbean island by yourself to see which one suits you best.

There is a place called The Commonwealth Of Dominica No its not the Dominican Republic But its Much Prettier. It is situated inbetween the two french islands of Guadeloupe and Martinque and is 15 25' north and 61 20' west. You said that You are an adventourous person.-on the Island of Dominica*NOT THE DOMINICAN REPUBLIC.You can go horse back riding and that island was rated as in the top5 for best coral reefs soooo its excellent for snorkelling/scuba-diving.Its the ideal place for Hiking because most of the island still remains under Natural rainforest vegetation and it is very rugged with the tallest mountain almost 5000ft.The island Of Dominica also has the world's second largest boiling lake and countless waterfalls and 365 rivers and several fresh water lakes also.We were rated number one(1)for Whale watching in the Caribbean. The island of Dominca has way much more to offer than the other caribbean countires we are just not advertised so much.If I continue to go on and list all the things we offer, believe me I will never end-so I am leaving you with These 2 websites please do vist them. And I must Note it was rated as the 4th most peaceful place in the world

Dominican Republic is fantastic, lovely people, hot weather, great beaches, just don't drink the tap water. If you are looking for surfing, the Puerto Plata side of the island seemed to have bigger waves than the Punta Cana side. Punta Cana had better sandy beaches, clear water and is quieter. Depends on the resort, I guess. But I am no expert, yahoo or google TripAdvisor for many reviews. Hope that helps.
I'll be in Puerto Plata for a week in December myself. DR is lots of fun. Enjoy.

Dominican republic is a great place, but it depends on what U want for your vacation. Some places are better for night life, some are great for shopping, and so U can go on for relaxing, swimming, nature, diving, adventures... enz..
So it would be a little helpfull if you explain what you would want to do during your vacation.
Me personally, I'd say just go to Curacao. for me the best place to be in the world.

in case you bypass to Puerto Rico you would be able to desire to bypass to Culebras. It has eye-catching seashores and additionally you will spend the day relaxing interior the sunlight without cares interior the worldwide. different great selections are St. Lucia, US Virgin Islands, St. Martin, Martinique, and St. Barts. i do no longer advise the Cayman Islands. even nonetheless that's eye-catching for scuba diving there are no casinos or golf equipment = no nighttime existence. a minimum of 10 yrs in the past there became in basic terms a million club. My flight became in the back of schedule 9 hrs leaving their airport and that they gave me a complimentary cost ticket to return and that i by no potential used it with the aid of fact i became in basic terms bored. i assume that's ok for honeymooners yet there are maximum of alternative selections.
