You're generalizing and narrowing it down to two choices when it's not that simple. Manners, in my opinion, are doing what you can to make the people around you feel comfortable. I can still be "me" and do this. Mannerly and fake aren't synonyms, by the way.
The example of servers in street clothes or tuxes doesn't have as much to do with manners as professionalism, which is another matter entirely.

Because for some reason, some people believe that the whole world would be a better place if we were all cookie cutter, predictable people. So we should all respond to situations the same way, so as not to offend or confuse, right? WRONG!

even what you call 'individuality' isn't really. it's still behavior copied from someone else, that's how we learn all our behaviors, is by seeing others do them. what you're talking about here is not so much about individualty as comfort zone. you're not accostomed to formal behavior, so it makes you uncomfortable. on the flip side, many people feel that 'proper' behavior is polite and respectful, and so they feel good when people are proper towards them, because it shows respect.

I think it's proper yes.
There is a defining edge to behaving in a civilized manner in a civilization. Proper behavior and civilized manners go hand in hand with living in a dense populated city.
If you want to behave in an uncivilized manner then go live in an area where you don't have to deal with people much.

I'd rather have someone act properly toward me than improperly. Maybe what you mean is "formal" and I think that's okay too because when you don't have rules (unspoken or not) people make up their own and sometimes you have that nitwit who has to be TOLD how to act. They spoil it for the rest of us.

i think individuality..
it's dumb when people say "i love you for who you are" and then get so mad when that person is blunt.
speaking of which...people also say "i want an honest partner"..(mostly women) and then when they say "do you like my dress?" and the parter says "no"..they get pissed!
that's not loving the person for who they are..that's loving what they CAN be..
and there's a huge differance.
