Horseradish sauce made at home can be rather coarse. A good tip (which was given to me by a chef in England) is to finely grate it, and then role it with a rolling pin until it becomes soft and fine (this doesn't take very long). It gives it a smoother textured sauce.

1/2 lb horseradish root, peeled
1 1/4 teaspoons salt
1 teaspoon sugar
2 cups white wine vinegar
Finely shred the horseradish root. It may make your eyes water like onions do!
Add remaining ingredients to bowl and mix well.
Funnel into clean 1/2 pint jars and cover with caps.
Will keep in refrigerator for one year.

Grate it finely and mix with mayo, a little lemon juice, salt and pepper.
Or ... make a cocktail sauce by mixing the grated horseradish with lemon juice and ketchup.
It's also really good folded into mashed potatoes!

My recipe at my restaurant was 1 pound grated horseradish to 5 pounds of sour cream. So to scale it down, I guess it's a 1:5 ratio. (Everyone loved it.)
