I like things that remind me of summer, let's face it, we all have the heating on so it's not cold in the house!! I love to cut a papaya in half, scoop out the seeds and fill the hollow with raspberries, then squeeze a little fresh lime juice over the top, it brings out the flavour and cuts the sweetness of the berries.

treacle sponge pudding with custard so evocative, brings back memories of trudging home after double PE in the freezing rain caked in mud and soaked through, to have a lovely hot stew and warming dessert .

"Apple Crisp" - 8 servings

5 medium tart apples; peeled and sliced
1 1/4 cups sugar; divided
1 3/4 tsp. ground cinnamon; divided
1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/2 cup cold butter
1 cup water

In a bowl, combine the apples, 1/4 cup sugar and 1 tsp. cinnamon. Transfer to a greased 8" square baking dish. In a small bowl, combine the flour, baking powder, salt and remaining sugar; cut in butter until crumbly. Sprinkle over apples, pressing down to smooth top.
Slowly pour water over the top; sprinkle with remaining cinnamon. Bake, uncovered, at 400* for 40-45 minutes or until apples are tender. Serve warm.

nothing can be better than Indian Carrot Pudding (Halwa), make it in big quantity, store and when required warm and eat it.
It got everything-carrots, milk, dry fruits, cream, sugar to make a perfect dessert for winters.

Also try an Indian sweet made with jaggery and peanuts, as they got iron and vit D, important in winters(esp afternoons)

I love Rice Pudding.
Cook enough minute rice to make two cups of rice.
Take one 4 oz. package of vanilla pudding and make according to directions on box.
Add one cup raisins and cooked rice to the pudding before it sets.
Also add about a tablespoon of nutmeg or more if you like more.
Chill and eat. Yummy on a cold winters night!!!
